With an extra uncooked flat of Corned Beef on my hands, I decided to turn it into Pastrami using the Char Broil electric smoker and some maple wood chips after soaking to remove excess salt and adding a spicy rub of black pepper, coriander, red pepper flakes, and garlic powder.
