Hi someone gave me some eggs that needed to be pasteurized but I have been busy and have not gotten a chance. I did not know this process so I just put them in the fridge. Is it ok to do this process once the have been in the fridge already? I have not cooked of them yet.

By adding those many eggs at a time to a small pot of water the water temperature will drop. Do few eggs at a time and also have big pot of water. According to USDA you have to maintain 140f for 3.5min. To check if your process as worked crack open an egg as soon as you take it out of water and yoke temperature should measure 140F. Start with room temperature eggs. Also use calibrated thermometer such as thermapen.

Hi 😊, im confuse .. while you wait for those 3 minutes(140F ) , do you still turn on the stove heat or you just turn the stove off and wait it soak for 3 minutes ?

Hi Jess! Once the water reaches the proper temperature, do not adjust the knob on your stove. I highly recommend having a thermometer for this, since it helps keep an eye on the temperature of the water. After the 3 minutes, turn off the stove. Hope this helps! God bless you 💕 xo, Orchid

I love you & your bloopers,, thank you for showing me this because I make my own protien shake which is the best way to drink a protein shake instead of purchasing a barrel of whey protein, & was curious if it was o.k to put raw eggs especially with all the crazy diseases in this world,, thank you great video...I just SUBSCRIBED..

It’s slightly easier moving eggs in and out with tongs (with a rubber edge to keep it non-slip). And no worry of bringing along the water from the spoon.

Sunnyside up and over-easy eggs get to a much higher temp than pasteurization so that isn't an issue, now if you're making mayo, dressings, meringues, etc., this is a great idea.

You pasteurize eggs to eat them raw. You can use unpasteurized eggs to bake because in baking you will taker it over the 140°F tempature

Several important bits of info are missing. What temperature (high, medium, low?) do you heat the water. Then after putting in the eggs , is the heat still turned on and what temp are you using then or do you turn off the heat but leave the pan on the burner for 3 minutes. You are not precise enough.

Hi Joan, I apologize for that. Since everyone's oven is different, it's important to use a thermometer for temp accuracy. On average, medium heat if fine, as long as the temp stays 140F. And yes, since the eggs only need 3 minutes in 140 degree water to pasteurize, stay by the pot and keep an eye on the temp. That might mean turning off the burner. Hope this helps! xo

Hi, great question! Having a food thermometer is important for pasteurization. Once you get the temperature right, it only takes 3 minutes to pasteurize!

@@mehtarm Life Hack: If you take an ice chest fill it with 140°F water and close the lid it will maintain the temp. for about 30 to 45min

Do half a dozen to 8 eggs at a time. Use clean and sanitized poly carbonate egg tray to store pasteurized egg not the paper egg tray that is potentially laced with germs previously used to store the unpasteurized eggs.

I was going to ask this, as I did on other similar sites:................................"Once I do this, can I then put the egg(s) back in the fridge? I put a raw egg in the smoothie I make for breakfast (and another one after a workout), so I'd like to do a batch of eggs at a time, rather than double or triple the time it takes to make every single smoothie; thanks.".....................But I guess the answer is yes, right? Andrew Hennell naldc.nal.usda.gov/download/CAIN709025458/PDF CFR7, Chapter 1, Part 55, Section 55.101 of the regulations governing the Grading and Inspection of Egg Products (62), reads in part as follows: "Strained and filtered liquid whole egg shall be flash heated to not less than 140° F. and held at this temperature for not less than 3.5 minutes." “...since the current pasteurization requirement for whole egg has a long history of adequacy, and since recent decimal-reduction-time studies provide confirmation, the more precise statement may be made that every particle of strained and filtered liquid whole egg shall be rapidly heated to not less than 140° F. and held at that temperature for not less than 1.75 minutes. This is based on and requires a 3.5-minute average holding time to assure that the fastest-moving particles are held at least 1.75 minutes when fully developed laminar flow occurs.”

Nope, it should not touch the bottom of the pot. Allow the thermometer to float in the water.

3 minutes ain't long enough. The center of the egg will still be at room temperature. When you put the eggs into the water, the temp of the water will drop...so instead of the water being at 140 deg F, it's more like 135 which would require at least 75 minutes at that temp to pasteurize. 3 minutes and risk my health....NO WAY.

Room temperature eggs shouldn't cause a huge drop in the temp of the water, and that's why it's important to have a thermometer to monitor the temp. This method has worked for me MANY times, but to each their own. Thanks for the comment though!

That is true. The center of egg need much more time to reach 140F. There are a bunch of people demonstrate the wrong way of eggs pasteurization on KZitem.
