In this "How To" video, I prepare fresh lemongrass into 1 or 2-inch pieces, which is the preferred size for most recipes. I also prepare some lemongrass in a chopped version, ready to be used in a spice blend or paste. The prepared lemongrass can then be easily frozen for future use.
Lemongrass has a hard outer sheath that needs to be removed before use. The bottom and top of the stalk should also be trimmed in order to maximize the flavor released from the stalks. Preparing the lemongrass this way is a good way to always have the ingredients you need at hand while freezing them reduces the essential oil loss from the drying stalk.
The best part is that the lemongrass can be used straight from frozen as it does not need to be cut again later on. Just take it straight from the freezer bag and pop into your stew or curry.
