I agree with the others. this is a perfect how to video. Short but completely easy to follow, your voice is easy to hear and you were informative (talking about the cell wall). This is wonderful. My mother and I are allergic to lemons and some other citric fruits so I've been looking into substitutes like lemongrass and lemon myrtle. I might grow some lemongrass now that I know how to prepare it.

Thank you for your suggestion! It is a good idea for the blog post. The process of growing lemongrass takes longer. I just visited a farmer in Thailand her lemongrass farm, it takes a year for one to multiply to 150 plants. I will let you know when I have a writing on growing lemongrass. Thank you again.

Lemongrass uses in the soup, is meant to infuse flavor not for eating. Smashing the lemongrass seems to be the most efficient way to get all the flavor out. Remove them before serving is a good idea then.

Lemongrass is also native to Fiji but for some reason, Fijians never use it in their cooking. We however use the leaves to make lemon tea. So this is giving me a few ideas, thanks.

Good question, I haven't done it yet or seen one but it doesn't meant you can't. I would do smashed style or curry style. The chopped one is more for stir-fried or making a paste. Thanks!

Please use google to locate my recipes for you to cook with lemongrass "pranee recipes for lemongrass". You should have plenty of recipes in soup, salad etc. Good luck!

So it's not common to put lemongrass in the curry since it's already an ingredient in the paste, huh? I've seen some recipes call for fresh lemongrass so I thought I'd give it a try, but maybe it's not worth it? I had some Vietnamese food with tiny white hairs in it. I believe it was from the fiber of the lemongrass. It was good anyways. I have had it before and not noticed this however.

So lemongrass IN a Thai green curry (not in the paste but the dish itself) would be prepared how? Chopped up finely or smashed and cut into 2 or 3 pieces as a flavour (like kaffir lime leaves) to the curry whilst it's being cooked?

You will smash lemongrass as shown for a soup style preparation. Put into a pot a long with jasmine rice and water before start cooking.
