My Italian friend Stefano told me how to properly process pesto. I took that as an opportunity to make this video for you. While shooting the video, I came up with the idea of making the pesto myself. This tastes sooo much better! I'm really excited.
Pesto Genovese:
4 fresh pots of basil (remove the leaves)
75 grams pine nuts
40 grams Parmesan or Grana Padamo (hard cheese)
1 large clove of garlic
1 tsp salt
75 milliliters olive oil
If you want to roast the pine nuts beforehand, they need to cool down again (preferably fridge-cold) before they can be crushed.
The pesto is enough for 500 g of pasta. This feeds two very very hungry or four not so hungry people. It's always difficult to assess.
