I adopted the traditional recipe of Mantua pumpkin tortelli, changing it a bit to make a delicious and light vegan dish that is perfect during winter and summer.
The original recipe makes use of parmesan cheese for the stuffing and butter for the seasoning.
I suggest adding lemon juice before serving; this note of acidity will enhance the flavors.
I decided to use normal mustard instead of Mantuan mustard.
