Clean the tuna fillets and cut them into pieces that will fit into your jars.
Sterilize your jars and lids by boiling them in water for 10-15 minutes. Let them cool before using.
Prepare a brine by mixing 4 cups of water, 1 cup of white vinegar, and 1/4 cup of salt in a pot. Bring the mixture to a boil and then let it cool.
Add any desired seasonings to the jars, such as garlic, onion, or lemon slices.
Pack the tuna pieces into the jars, leaving some space at the top.
Pour the cooled brine into the jars, making sure that the tuna is fully covered.
Place the lids on the jars and tighten them securely.
Store the jars in a cool, dark place, such as a pantry or cellar.
Your preserved tuna should last for several months when stored properly. When you're ready to use it, simply drain the tuna and rinse it with water before using it in your favorite recipes.
