Thanks for your bean canning video. I've been meaning to do this for about 8 months! Today is 4 years later, April 15, 2022. The world has turned severely into a different place. Thanks for aiding in the simple basics! Now, we could be looking at WW3, and only God knows what's in store! Having basic food proteins, as beans, needing to have them cooked is very important as water rationing is also a problem with severe drought conditions. Praying you are well.

A FWIW.... Presto makes an adjustable (3 piece - #50332) regulator that fits many of their canner models. I have one that I bought in the late 1960's and another, sometime in the 1990's. Have this regulator for both of them. It's adjustable for 5, 10, 15 lb, as needed. While I'd like to have an AA canner, especially the large one, have been using Presto for many years without any material problems that I could blame on the canner itself. Highly recommend Presto for those on a limited budget. (Disclaimer, I'm not associated with Presto in any manner other than being a satisfied customer.) All the guidelines that I've seen, stipulate that the canner exhaust time is 10 minutes. I don't know if 7 is something unique to AA canners. Plus, the manuals to both of mine call for 10 minutes. Hope someone finds this to be helpful.

I love my vintage presto! I have a 1953 16qt presto pressure canner no.7. I also have a new 23qt presto. The All American canner are lovely but out of my budget.

Ugh My canner was almost done just eight minutes shy of the time and the flame went out. I quickly relit but it did drop below 10 psi. Amy I screwed or can i just process an extra ten minutes?

I just canned a batch of Great Northern beans in my pressure canner using the recipe in the book that came with my canner. It looks like the beans absorbed a lot of liquid (they were soaked overnight and boiled for 30 minutes before canning)and the liquid does not cover all the beans. Is this okay?

As I understand it, the inside of the jar is sterile after canning process, so the beans out of the water are fine. Same happens with meats and they are not dried out when the jar is opened. Hope that helps.

Instant Pot uses pressure to cook, but you cannot can in it. It is basically a new-fangled way to cook meat fast like we used to with the smaller pressure cookers. But, it is nice since it has a built-in timer and many pre-set functions like broth/soup, yogurt, saute, meat, beans, etc. And a keep warm function, which I really appreciate when making bone broth and yogurt cycles that might end in the middle of the night.

Debra, there may be several differences, with regard to canning. First, pressure canning guidelines are established based on the entire cycle of heating, holding at pressure and the cool down time, at the end of the cycle. This is established based on processing a *minimum* of 2 quarts or 4 pints, at the same time. Many pressure cookers are too small for this. As far as I know only the Instant Pot MAX will have (has?) approval for pressure canning on a limited basis. Any pot, including an Instant Pot can be used for waterbath canning, as long as there's enough water to cover the jars for an inch. Hope this helps, a bit.
