Thank you for this, I'm wanting to make protein bars with a little melted chocolate to cover them and have always had problem with chocolate seizing, this was very useful!

I heard not to throw out chocolate, so when my chocolate seize I make hot chocolate....lol!

First you said 1 1/4 chocolate plus 1 tbsp and then 1/4 chocolate and 1 tbsp. Which one is it? Hmmm?

That is not what I said. The rule is to prevent clumping of your chocolate you need to add enough liquid to allow the chocolate to melt properly. So for every 1/4 cup of chocolate you can add up to 1 tablespoon or more of a water based liquid without it seizing and clumping. Less than 1 tablespoon of liquid in 1/4 cup chocolate will tend to clump and seize. I hope this helps!
