I like that you planted and grew cherry trees here in the east . Not under cover. I tried it but canker or he trees ozzed alot. The deer stripped the spring leaves and the trees . Well I gave up but seeing you have done it I'm going to try again

I've got tart bush cherries on my list. We've had cherries in the past, all of those trees have been 25+ ' tall and completely unmanageable. Can't get the fruit easily, birds love the trees...and massive aphid problems that are really hard to deal with organically. Bush cherries get to maybe 6-8' tall at most which is nice for those that don't like all the pruning to keep a small tree small. But, some varieties do sucker prolifically, so you just have to pull them up when they do come up. Can always give those to your friends.

You might take a look at cane pruning grapes and how they manage the 1 year / 2 year old wood and cane replacement. Might help you think about a system that could work for the peaches. Also, just another thought... you can probably prune off a lot of the younger growth off of your 2 year wood - you're not going to keep it for production anyway. Maybe leave a couple feet of 2 year wood and take off the rest?

Why not cut the top growth of your peach tree in line with the last tier at the top of the fence for a more espaliare look. Then let it flush out with new one year growth this spring. You could summer prune to thin out all your excess water sprouts and keep it uniform for the following years to come and then rotate out your 2 and three year old wood without it getting out of shape. From my POV your tree looks super tall and could be possibly hard to manage. It's like Tom Spellman says keep your trees at picking height and (in check), the fruiting spurs will follow. Something along those lines. I definitely see them taking shape and applaud your effort. Pretty cool idea. I have a couple peach trees myself and know how vigorous they can be.
