First time I've ever seen anyone take the time to explain how to cut a cucumber with your fingers curled under. I think most of us know to keep our fingers curled under, but here we see how the knuckles are a guide and that is like mind-blowing for me because I have never seen it demonstrated or told. As child 👦🏽 in Africa I remember my mother putting bit of salt on the cut ends and rubbing. There be a froth substance. The removes the froth.

Adding an acid in chows helps to preserve the ingredients. It's a form of pickling. I use vinegar sometimes because it has a neutral taste as compared to lime or lemons

I will try this--I love cucumbers when they aren't bitter. They're almost like a honey melon. But good grief, the bitter ones are godawful. And... your knife skills are AMAZING.

Maybe you can't taste the bitterness because you cut it away, it's suppose to be more bitter at the end & less in the rest.
