Great video, I think I'm already at the plateau stage, it actually started when I included refined sugar, coincidence? I gained 20kg in total, but 10kg the first time, then I eased up on the food (restricted a little) because people telling me I'm eating too much and then I realised what had happened so then feasted and gained another 10kg, but now it's stopped or eased off. I also got the serious desire to exercise about 3 weeks into my all in with carbs! It's amazing how the body works and it definitely makes so much sense as a survival mechanism for the body to regain fat for future times of famine if we've trained our body to be cautious of famine, whether on purpose or by accident the latter in my case. I really wish there was more on this, it seems a few KZitemrs talking about it and that 1 study on it, I guess it's not very profitable to make a study on people gaining weight when the money is in weight loss, screwed up system imo!

From what i understand, hormonal disruption is what creates metabolic damage. Having a high carbohydrate diet might limit dietary cholesterol, especially on a vegan diet. low fat/cholesterols in your diet will impair hormone production/function. I have found great success in repairing my metabolism by simply eating 40-60% of my calories from saturated and monounsaturated sources (subsequently reducing my carbohydrate intake in half). I track my calories and have been for 6 years, after altering flipping my fat/carb ratio, I have been able to consume more calories without gaining fat, indicating a more efficient metabolism via hormones re-balancing (increased testosterone). Mitochondria health = metabolic health. Mitochondria prefer to oxidize fat as a fuel source. more fat in diet = more mitochondria.

Nice stuff there! The big mistake that people usually do me included after they reach their goal weight is that they don't realize that their metabolisms are now way lower since mobilizing fat and protein from the body ihits as hard as a punch to the stomach. There should be a transition first that introduces carbs while maintaining a small deficit to maintenance in calories for 2 to 3 weeks. Doing some strength/HIIT while transitioning will help maintain that muscle which will keep the metabolism high enough and by that not storing new fat.

This is so scary to me. Someone who has a mild history with ED, and accepting the fact that I may gain that much weight for any amount of time honestly scares the crap out of me. Is there a way to do High carb vegan without gaining weight? is there a balance? I've ben vegetarian for 12 years and wanting to make the switch to be healthier. it's just scary.
@SuzanneFarrand
9 жыл бұрын
+Alora Farni Yes there is a way. I'm sitting here listening to this and thinking about the metabolism. It does not take 2 years to correct the metabolism even if you've abused it. Everyone who has gained weight has slowed it down that is true but speeding it back up certainly can happen rapidly. You are already a vegetarian so the way you are starting is completely different than Victoria. I'm going to watch the rest of this and write something up. Basic add in to a regular vegan diet with barely any exercise would be about 2 lbs of sweet potato or maybe golden ones. The sweet potatoes are lighter and more nutritious so these are good to stick to. If you work out hard core you could go up to the 4.5 lbs. a serving. Go slow and don't put fruit over top make it your last meal for the day. Wild rice or brown rice is good. I would only add the gluten free pasta once a week or every other if you work out hard core.
@SuzanneFarrand
8 жыл бұрын
Update: I'm finding that it goes according to the amount of exercise you do. If you do none. I would say completely raw is better. Even sticking to just fruit as much as possible. Maybe one or two cooked meals a week of lets say sweet potatoes or quinoa. If you kick up the exercise you can increase the calories and the density of the food. Add more potatoes, pasta, and vegan pizza. Appetite and body needs obviously increase when you are working out. Non- activity around 2200-2300 calories...& then with exercise anywhere from 2700-3700 calories for a female.

how to increase calories? slowly by 100 a week or increase quick? I eat around 800-900 kcals a day and want to increase cals.. I restricting for a long time (around 8 years) and because of colon problems I afraid to increase the cals.
@SuzanneFarrand
8 жыл бұрын
Really. Well anyway you can. I just did it but I was also doing an extensive cleanse so I had a huge appetite. 800-900 calories is starvation. You'll get a feel for a proper amount. Shakes are a good way to increase your caloric intake. 10-15 bananas with water or ice is somewhere around 1000-1500 calories. You kind of need to pay attention I sometimes go down to 2000 in a day. You want to try and make 2500 the bottom line. You can drink a huge pineapple juice (46 oz) it's around 750 calories. One of the first days I crammed in 15 or 20 bananas. It took several hours. Made me sleepy. This goes away. It doesn't even phase me. Its a type of re-feeding the sleepiness. Colon problems; so you are afraid to increase. Those problems will disappear. 32 oz (3-4 of these a day) of water before every large meal to move the last one out of your stomach. This helps digestion. Eating foods that go together. Looking at the fruits that digest together and separating 2 hours or more between meals. I would try to stick more to fruit and real juices for majority of your calories. It will always move easily. Rice and sweet potatoes are easily digested too. cronometer.com is a good site to use to count and see the nutrition in what you eat. Exercise can increase appetite and balances it all out.

So really I only know fattissue to be there for 1. energystorage 2. isolating warmth 3. protection fo organs or joints etc. but why does the body has to store fat in order to heal? what do these fattissues do in the process? Also you said that because the body is used to store fat (because of eating a lot of fat) it continues to do so for a while even though we switched to carbs? is that what you said in the video? or did I minsunderstand? cause that really wouldn't make any sense, also then I really would like to see some science backing this up cause that is totally new to me. I really want to understand it. i still haven't found an explenation that really makes sense.

The Consequence There are also toxins stored in your fat cells; if your body breaks down the fat cells, they get released. So your body waits with breaking down fat untill your body is as 'clean' and healthy as possible so it can handle and clean out the toxins
@80strangeways
9 жыл бұрын
Iris Wilken thank you so much for replying. true they store toxins as well. I remember that people said you should not go on a diet while you are breast feeding because it will release toxins and it will go into the mothers milk. I read about toxins being stored in fat tissue when I was having my baby, but I haven't read any study or the like explaining why the body would pile on even more weight once you start eating clean. Can you recommend any literature?
@NutritionbyVictoria

The Consequence There is a transition period that a person must go through when switching from burning fat/protein (ketosis) for energy production to carbohydrate burning. We can't just start adding more carbohydrate foods (fruits and starches) to our diet and expect our metabolism to adjust overnight. We have to supply our system with a consistent, regular intake of sufficient carbohydrate calorie foods in order to raise the metabolism back to normal and inhibit further body fat production. During the initial metabolic restoration phase, the metabolism is still low from being in ketosis and converts dietary carbohydrate into body fat (de novo lipogenesis) until body weight raises enough to raise the basal metabolism (as well as regulate hormones). The plateau phase is when the metabolism has officially reverted back to burning carbohydrates for energy production and de novo lipogenesis has been turned off. Body fat serves all of the functions that you listed, but it also has a major role to store toxins as well. When we diet, we drop our body fat and hydration levels, which both serve as a buffer to protect us from internal toxins. By forcing weight loss, we release these toxins into the blood stream without the necessary energy or nutrients to properly eliminate them, thus resulting in an increased toxin concentration in the system. Check out the Minnesota Starvation Study jn.nutrition.org/content/135/6/1347.full for more info about metabolic damage and restoration

Oh no! Why is Ketosis bad? Doesn't that burn fat? My physician is making sure that I stay in that state. I just found your channel and I am so interested in what you say.
@NutritionbyVictoria
9 жыл бұрын
Brittany Orr Ketosis is a metabolic state that occurs when the body runs out of carbohydrate fuel and switches to burning fat and protein for glucose production. This biochemical process lowers the metabolism and causes a flood of toxic ketone bodies (byproduct of protein/fat metabolism) in the system, resulting in dehydration and acidosis. Prolonged ketosis has been found to contribute to blood sugar issues, hormone imbalances, increased rate of aging, muscle wastage, thyroid issues, heart disease, kidney problems, cancer, and weight gain. Essentially it's like running your vehicle on the wrong type of fuel or running your car when it's out of fuel; it causes damage to the system. I'm not sure why your doctor would want you to be permanently in ketosis considering how bad is is for the body, but then again, most physician's don't have any nutrition education. The only way to get out of ketosis and improve the functioning of the metabolism is to eat sufficient calories and carbohydrates on a daily basis. The metabolism essentially has to switch back to carbohydrate burning after being in a state of fat/protein burning, which can result in temporary fluid retention and fat storage. Being in ketosis is like starving yourself, so it primes the body to store fat and fluid in case of another famine. After months of sufficient carbohydrate calorie and fluid intake, our cells begin to function normally again and start the process of eliminating excess fat, fluid, and toxins from our system because now we have enough carbohydrate calories, nutrients, and water to support the removal of excess waste within our system without causing further damage, which results in an optimally healthy and ideally lean body in time.

***** There are numerous people who have been on a ketogenic diet year around for years without apparent problems. I do think it requires knowing what you are doing and the sort of people that have the discipline to do it, do it very well. They are very smart people. Dominic d'Agostino, Stephanie Person are two people who are easily found in YT but there are others, of course. Now, do I think the ketogenic diet is for everyone? No, and I wouldn't recommend it. I think the natural, default, diet for humans is a middle ground halfway between glucose/carbohydrate adapted and keto-adapted. And that would be fat-adapted. No one even talks about it. In fact, someone like you is likely to deny it exists (because there are no studies). Fat adapted is the natural state for most humans. It allows metabolic flexibility and insulin sensitivity and the ability to go for long periods without eating (and without feeling undue hunger or energy loss). It is the ideal state.

We know that excess in anything can be damaging to health. There are different strategies to restriction according to beliefs and/or moral philosophy. Intermittent fasting has become very popular and fashionable and I practice it myself. There are many benefits to fasting. I can highly recommend it. Thanks for making this one! I felt like that too. So everyone who's obese is simply not eating enough carbs and too many toxins? What are toxins we eat? Where do they come from? Would love to hear from you how sodium affects healing if it does at all? Is it a toxin or do we need it for proper function? I've heard that especially iodized salt is necessary because it is responsible for storing water properly or something? Sometimes eating salt makes me feel energized for some reason. Any explanations? If someone ate a vegan diet with proper nutrition and did everything right, came to the healingphase and lost excess weigth and then icoorparated more salt and went through a period of stress and irregularities of eating could this affect the metabolism so bad that it actually will store fat/weight again? Would eating more carbs speed up the healing rate? Like someone whos only eating 2200 vs someone whos eating 3000 cal? I mean does the amount of carbs have an affect on healingrate? Like if you want faster and more effective healing could you just increase calories?
@NutritionbyVictoria

Carina Maren Most people who are obese are consuming too many calories from fat and protein and not enough calories from carbohydrates and nutrient dense plant-foods. Even if a person has never dieted, they will suffer the effects of metabolic damage from consuming excess protein and fat, which slows the metabolism down, promotes fat storage, and chronic disease. Essentially they are in ketosis, but with a caloric excess that is constantly filling up fat stores. We do need sodium to maintain adequate fluid balance within our blood, but our needs are very minimal. 1500 mg of sodium or less per day is what most people should aim for to reduce excess fluid retention and prevent excess sodium build-up in the body. Excess sodium can interfere with homeostasis (metabolic balance). Iodized salt is not particularly necessary, it just comes with iodine which most people are deficient in. Iodine intake can be met by consuming sufficient fruits and vegetables on a daily basis as well as supplementing with seaweed like nori. The body is constantly regulating it's fluid balance per our electrolytes. Once balance is achieved, consuming excess salt will result in water retention, and not consuming enough sodium can result in issues as well. Due to the crucial nature of electrolyte balance, our system regulates them very easily and quickly compared to the factors involved in energy metabolism (aka hydration takes priority in our body). Energy metabolism is a much more complex process that is highly adaptable due to our built in survival ability to go for long periods of time without food, but it takes longer to balance out energy metabolism when the system has been deprived (of carbohydrates and calories) or taken in excess (protein and fat calories) for a long period of time. In terms of recovering our energy (carbohydrate burning) metabolism, we have to eat enough to support our current energy and healing demands, which is dependent on a number of objective and subjective factors. If the body is gaining weight on 2000 calories a day (which I see ALOT), then that person has metabolic damage and will need to gain weight until their body reaches it's healthy set point. Studies have indicated that those who consume the most carbohydrate calories to recover their health, metabolism, and weight to normal levels, do so at the fastest rate (least amount of time). The body regulates it's carbohydrate fuel requirements exceptionally well, so any weight gain on a high carb, low fat vegan diet has to due with the functioning of the individual's metabolism, not the food they are eating. I always suggest that someone eats their BMR X activity level as a bare minimum to support their current metabolism, and if they desire more to eat more. It can take some time for the metabolism to switch over to carbohydrate burning after being used to burning fat and protein for a prolonged time period. Often, once carbs are reintroduced to the diet, the appetite will dictate calorie needs. I also wrote a blog post on "How Many Calories You Need Per Day" if you want to check it out! www.nutritionbyvictoria.com/blog/how-many-calories-do-you-need-per-day

+Mrs. Perez You certainly can speed the metabolism back up on a non vegan diet. The weight loss, your digestion, and complete metabolic function on vegan or high carb vegan is much more efficient and effortless. IF and that's a big if, done properly.

Hi Kendra, a high carb low fat plant based vegan diet has not caused the diabetes- in fact it will aid in lowing your insulin needs once adopted. Focus on fruits, vegetables, and starches- lots of water. Look into the work of Dr. Neal Barnard.

You can actually reverse your Diabetes with high carb low fat nutrition. Dr. Mcdougall is also a good source

Protein is non energy macronutrient. In general your fat cells are saturated and cannot store energy correct. Lose fat with a caloric deficit and get adequate protein, don’t do this extremely high carb diet

Unfortunately there is absolutely no science, no legit studies or documented research proving that there is such a thing as metabolic damage. However a down regulated metabolism is the direct result of individual lifestyle choices.

doesn't take a year => should only take a couple of months :-)

Ezgi Sahinoglu it depends from person to person but what has being told in this video that it takes years can only be true if the person has constant relapses of there new lifestyle and the old one ;-) people should actually not count callories => they should eat healty foods and your body will take care of itself . people who are overweight but eat healthy do exist but it can be a genetic thing comming from there parents or there grand parents . it's your microbiome that already adapts after 4 days of eating different and mostly if people have hormonal disballences it takes about 3 months . some people need more time but that's mostly because they are obese => and they need more time to get all the toxicity levels out of there body ( these toxins come free from there fat deposits ) there is to much to tell on this toppic because there are many fields that actualy work together .if people have resricted there bodies to the extream like anorexia then it is better for them to get some professional guidance . the biggest problem i think people have is self acceptance . body immage is just the outside => being happy is the most important thing and that starts with self love ;-)

were you a fan of freelee and durian rider when you made this video. unless you have anorexia nervosa or bulimia than you wont go through metabolic damage and it does not take years to cure it only took 2 weeks of re-feeding.

It takes 2 years???? I'm sorry but this seems a little off kilter. Yes 'metabolic damage' is a thing, not the correct term but I get why you used it. But it doesn't take *2 years* to correct. With consistency 3 months to a year is usually enough. And 2000 to 5000 calories, what...who..where did you get that BS. If you have 'metabolic damage' you shouldn't be doing strenuous aerobic exercises that would put you in need of 5000 calories. Firstly if you are going to exercise while correcting you metabolism, than it needs to be weight training, putting less stress on your body and if not you should be going by your BMR and activity level to determine calories. Secondly you keep harping on about carbohydrates, No you need a true balance probably something like 40, 40, 20 (protein, carbs, fat}. You need to be eating as little processed food as possible to maximise nutrition, keeping your beef grass fed and your oils virgin and carbs should only come in the form of whole vegetables. Drink at least 2 litres of water a day. I recommend paleo recipes or vegan weight training recipes (they maximise protein intake). Protein takes more energy to consume and thus speeds up your metabolism and can help people that struggle with overeating as it can make you feel full longer with smaller portions and calories.
