Hey James, thank you for that wonderful inspiration. I tried this today and it was amazing. I added dried plum powder to the rub because I felt it lacked a bit fruitiness in that oriental taste. As side dish i did a ratatouille in a tajine seasoned with the very same rub. A phenomenal combination. Greetings from Germany!

One thing I'd love to see you (or anyone, really) do is simultaneous reverse seared steak and new potatoes. On my Kettle, I came up with a method for this, where I'd take some Reynolds Grilling Foil, spread out a long sheet, pour a pool of olive oil and sprinkle salt in, before taking (washed and stabbed) new potatoes (the small ones) and rolling them around in the oil / salt mixture, before bringing them all together in the middle and double wrapping the foil, before rolling the sides and "front" in to create a "packet". I would just put this directly on the cooking grate over a hot fire (full chimney of charcoal); then after about 20-30 minutes depending on steak thickness, I would put the steaks on the indirect side to cook, and after about 40 minutes total the potatoes are done and the steak is ready to sear (even if it was overcooked by my tastes; my family won't eat medium rare, but it's too annoying to do mine differently). Since I got my Slow n Sear and started cooking steak around 225-250, I haven't done potatoes with it since I normally do those over around a 450 F fire. Since doing my Kamado research, I am wondering if something like this would work in the Kamado Joe. Do the same potato packet on the lower grate, not sure if the heat deflector should be used or not (the heat deflector would definitely help keep the temp lower for the steak, but I'm concerned it would block the fire from the potatoes - on the other hand, without the deflector, the potato packet may serve well enough as a deflector for the steak while getting the hot fire I'm used to doing them on). You're a madman for having two Kamado Joes (not that I can't see the use; I'd say two Classic Joe is better than one Big Joe - I just couldn't justify the expense), but having two of them certainly comes in handy for these head to head tests you do. Keep up the great work.

thanks so much. love the comments and ideas you’ve shared. you could do this a few ways. I would bank the coals to one side and cook the potatoes on the indirect side but right down low near the fire and then use a half moon deflector and a half grid above it to reverse sear the steak. this would keep it very indirect and then I would just remove the deflector and lower the grid when I wanted to sear

yes you can use it as a heat deflector so that its heat soaked and ready to use for searing

Im getting ready to pull the trigger on a KJ, and I can't decide whether to get a big Joe or a classic. were a family of 4, so classic would do as long as were not entertaining, but are there any disadvantages with the Big Joe vs. the classic?

I like your films very much and learn a lot. As I am Austrian and German is my mothertongue and we have Celsius and not Fahrenheit-degree scale, I beg you to repeat all the cooking times and temperatures slowly and distinctly. In adition you you could film the termometer quite near.....then one could read the scale. In other films you show close-ups from cutting the meat before and after cooking (unfortunately not here with the pork chops. Also you kindly could show close-ups from the trimcuts after cooking, so we could see the tenderness,softness, shining and so on......please.....thank You !!

I like to salt brine steaks, big cuts like pork shoulders, and things like chicken as it helps the skin and flavour. things like fish and pork tenderloin don’t seem to get the same upgrade but honestly this came down to not having prepared the day before otherwise I still would have salted the tenderloin

thanks so much. sure I can add a photo. I like the big block since it doesn’t spark when lightning. I have lots of shirts with holes from cheap coal exploding sparks when lighting and I am on a wood deck. big block I find also burns hotter and breathes better for low and slow

Get a CharGiller Akorn steel kamado. $300 and it does almost everything a KJ does. The Joetisserie even fits. Great way to start kamado cooking and not break the bank.

Yet again, great video. Could you let me know where you purchased this cooling rack and drippan? I can't find these anywhere. When setting up this cook on the first Joe I thought you're going to revearse sear the chops on the flat top griddle in this one instead of using an different/second one?

Thanks Jeffery. I used the same grill, just removed the indirect stuff so you could see the flambe and close up better.... normally when not recording I would have left the setup the same for the whole cook. Not sure where my wife got those pans and cookie sheets, will ask if she remembers

does the classic 1 with the felt gasket seal when you have a probe wire sticking out or does smoke leak out? on your next smoke can you see if when you unlatch any of your others joes with the wire mesh gasket it leaks? thinking about putting a wire mesh gasket on my classic 1 and want to know if Ill have problems.
