Thanks mate, there's a bit to it. Honestly Google will give you a much more in depth description. My 2 I recommend are olive pip co briquettes or cleanheat charcoal...

Excellent. So far, my favorite is the snake. I've had poor results with the minion. Putting the 2 charcoal baskets in the middle makes for good chicken wings, legs, thighs, and can even air-fry!

Brilliant video mate. I just bought a second hand weber kettle for $100 bargain. Im following all your videos now and il share too. I managed to get hold of some (genuine) charcoal rails which look great, however i've read that having the coals right up against your kettle wall could be a problem with the kettle's porcelain finish - your thoughts? Q2. I really like the Slow 'n' Sear Deluxe and drip tray, but it's pricey. Could I achieve the same result using the rails? Cheers, Paul

Hi, I have a question to ask, I am a neophyte to indirect cooking. Without being a snake, if I put 15 lit briquettes in the side basket on top of the pile of unlit briquettes...can it work for long cooking? How long will it last? Or do you have to place the lit briquettes in a way other than just "throw them on top of the unlit ones"?

Same as using the minion method. After your start up briquettes are in and the smoke is burning clean, the next briquettes are pre-heated enough to catch light without causing dirty smoke.

Man, I'm in awe how some folks can keep their grills that clean. With my kettles, I have always kept them somewhat clean, but my ash cleaning system "fans" always decided to lift away from the bowl of the grill, It's frustrating

Hi Aaron, I'm new to the Weber World. I did my first cook-up yesterday, went OK (not great). Just a few questions if I may? Q1. Loving the vortex - where did you get yours? looks like stainless steel... Q2. Also like your fire starters with the wicks? once again where did you get them? Q3. I have a new Weber with the charcoal baskets, they're ok but I think I'd prefer the charcoal rails.....any ideas as to where I'd get a couple of these? Hi mate! I got mine from a place called Kettle BBQ Bits, you can find them on facebook. The fire starters are from Drakes supermarkets, unsure if anywhere else sells them, they are a "Cleanheat" brand. Hrmmm I think the charcoal rails were phased out, best to look out for some second hand ones.... Thanks for reaching out and keep on BBQing!

I also meant to say that it's interesting you recommend controlling the temp using the bottom vent. This makes more sense to me than using the top vent which is what Weber recommends. I'll just need to get used knowing where i'm at with the vent lever. thanks again

Snake Method: 1) I lay them flat, but next time I will lay them as you indicated. 2) after the bottom row, I put in my wood. I get my son to split the wood to about kindergarten pencil thickness and put them end to end. I then put charcoal on each side and then one on the top. (Somewhere I heard not to put them on the, but in the charcoal for a better smoke. 3) I have not done a roast, but I have done cheap water cured ham. I also just this technique for rotisserie. This last weekend I kept the side of the rotisserie to the hot part of the snake. I had a more even heat in my pork loin. I basted my loin every 15 to 30 minutes and the rotisserie was shifted at that time. 4) I have two fire starters I am in love with at the moment, bushy and paraffin. I use paraffin mostly to start the snake.

This past winter I purchased a rotisserie for my 22" Weber along with the baskets for doing roasted chickens and turkey. I've been using the snake method for a number of years now with some pretty good success. I'm a bit concerned about filling up the baskets which seems like a pretty good amount of heat that would be created. What tips have you when using the fomented technique? Btw, nicely done presentation.

Thanks very much. You could either wait until the coals have died down, or add a small amount of lit coals to each full basket and create a mini minion method in each basket.

Hey Aaron, top video as always mate. I'm curious as to how you manage to get a full chimney ashed over in 10 minutes though - even 20 minutes. No joke, it takes me about 50 minutes! (using the regular Heatbeads and a couple of good firelighter chunks underneath). I've got the same "Char-Griller" chimney that you do.

50 minutes? Man these olive pips are pretty easy lighting. 9 times out of 10 I use my gas side burner, so that's probably where I'm getting my 10 minute ones done.... Instant widespread heat. Would definitely be longer with firelighters and a fully loaded chimney.

I have the charcoal basket which i got for free with the kettle grill i bought. It was of nexgrill. I want to increase the space for low n slow as the two charcoal basket on each side dont give like enough space, its enough to fit like 1kg wings or like a one portion thing. I wanna do a little more so i wanna do the one side setup. I cant get the charcoal rail in my country, what else can i use.

You missed my most used one..... the baskets on both sides, but the charcoal in the middle, baskets empt. Very useful for direct cooking with some cooler zones on the sides for veggies, etc. Also, I have some grill grates left over from my old gas grill, and I take a couple of sections of those and it covers the area above the charcoal very nicely that way.

When using the snake method; 1. use the bottom side of your chimney starter instead of the no4mal size. 2. Put your wood smoke pieces on top of your snake, and don’t soak them! They make steam until they dry out to start burning. No smoke flavour until they BURN! If you need steam use a aluminium foil pan with apple juice, water, apple cider vinegar or a combination. This adds some flavour, and helps the fire not be to hat. 3 if you want a better smoke flavour. Close the top vents to half, and put the vents over the meat in the snakes gap. Smoke lingers and concentrates more this way. Just don’t go overboard with hickory pieces. Can be a little strong flavoured. 4. You can tell how far the snakes has burned by putting your hand near the outside of your Webber. That hottest place is where it’s at. 5. Most importantly! If your looking, you ain’t cooking! Oh, you can modify the grill cooking ends by cutting and wiring it together again. That way you can just &lip both ends up to add charcoal, smoke wood without removing the grill to do so.
