The lonestar looks like a serious smoker but i dont understand the design. Is it a vertical or an offset or some combination of the two? Does it have a small hot fire or is it smoldering charcoal and smoke wood like a kamado or bullet style smoker?

ManCaveMeals Hey John thanks for stopping by and asking your question!! Hopefully I can shed some light and I will do my best to explain it. The Vertical Offset has a firebox on the side of the cooking chamber. The Firebox is your heat source as well as where you can add your choice of smoking woods. You can cook purely with logs (splits) or a mixture of charcoal and wood. The Offsets from LoneStarGrill have fireboxes that are multi functional. You can open the top of the firebox and there is a griddle and a Grill grate. Plenty of additional cooking choices. I am sure you have seen the horizontal stick burners, the vertical option gives you more space. With this Vertical Offset model, you can also cook / smoke with water or others liquids. Hopefully I answered your questions. If you have more questions please ask.

Just curious about the knife used to trim the chicken. Is that a shun ? If so how well do you like it? I’m considering the shun over my wustoff.

Would like to see more of the food than your back, try zooming in or providing a closer view of your cook when opening your pit. and how long did you brine the chicken? all that being said I’m sure it tasted wonderful !!!
