When I was like 22 and living on my own cooking for myself every day for the first time, I got some chicken thighs because they were comparatively cheap and I was broke. Holy. They’re the best part of the chicken, they’re so flavorful and it seems to me like they hold their moisture a lot better than all the other cuts of chicken.

I’m wondering now if it’s only a “people of color” thing to wash your meats before cooking. I’ve always seen the women in my family use water, vinegar or lemon juice to clean meats (chicken, pork, beef and fish). Is it safe to just cook without cleaning!
