The easiest way in my opinion is to get yourself a corned beef and smoke it. But not before applying a pastrami seasoning to it. The key to get it nice and juicy is to steam it once your wrap it in foil. Once it hit 160 I wrapped it and placed it in a steaming tray with beef broth. Remove at 203 and let rest for 30 min before slicing.
