Wanted to add a comment, Troy knows his BBQ! If you're looking for a great rub for brisket keep it simple, salt, pepper, garlic powder and cayenne is ALL you need. Your bark will turn out excellent! One suggestion if you are having trouble with smoking your brisket and can only afford "choice" cuts I find low temps will bring you the best results. Keep your pit at 225 or lower but be patient, 11-15 hours is a long cook but your brisket will be tender and juicy. I personally don't wrap my brisket until I pull it and then wrap it in foil and a towel for a couple of hours in a cooler. Hope that helps everyone, keep smokin'...

That is some great advice Smitty!!! I have found the same when cooking cheaper grades of beef. I've cooked a Select brisket at 215F and it was super tender and juicy. Not as juicy or tender as Prime, but very good!!! Yeah, it did take about 18 hrs, but I love those long cooks getting to smell that smoke and chill out with some tunes going in the background. Two questions: does the water bath act as a temperature stabilizer (seems like it would); when stacking meat (i.e., a brisket over a pork butt) does the upper meat baste or spritz the meat on the lower rack? I was struggling to keep the heat up on my Smokey mountain smoker, even during summer months. Weber has great instructions for their grills, but are very lacking for their Smokey mountain smoker instructions. This video was a game changer for the charcoal setup. I’ve struggled during warmer weather to keep the temps up, but this video got me dialed into the minion method which got me through a cool misty day in December. Game changer. Thanks @t-roy!

I'd love to get a brisket, but it's too darn expensive in these parts of southwest Virginia. I love smoking chuck roasts in lieu of 'em.

Just did a 9.5 lb. brisket on my 18WSM for a 4th July party and it was gobbled up, err DEMOLISHED in minutes! Poured some melted garlic butter on the slices when I served it. Probably the key step is be patient and dont skip the resting process after cooking - wrapped tightly for at least 1-1.5 hours before unwrapping and slicing. Troy your vids were a key reason I picked up a couple of WSM'S and I'll never stop using them- salute and happy 4th!🇺🇲🎆🥃

Hello again T-Roy! I'm doing an all night smoke on the Weber Mountain preparing a brisket on top and a pork butt on the bottom. Getting ready for Labor Day 2022. I've just ordered the WSM 22, that completes my set of all 3. My first was the 18" that I have had about 12+ years. It was one before the dome temp gauges and the ash catchers and probe draumets , Although I have added all but the ash catcher. I have cooked literally a ton of q over the years on it and it is still my go to smoker when it has to be my best. Enjoyed your video, lot's of fun with the WSM, thanks and keep them comming

Great video. Just got an 18" WSM off Craigslist. Never cooked brisket when I lived in TX (College Station & San Antonio) since good BBQ brisket was everywhere. Now I live in Richmond, VA, and the default BBQ is carolina pork.

I know it tastes very good! Our neighbor is originally from Texas and she cooked a brisket in her smoker and invited us over for dinner. (I brought the homemade chocolate ice cream.) It was phenomenal.

Hello Sir! Just viewed your video on the brisket. Well done and very helpful instructions. My wife blessed me with a Weber Smokey Mountain Cooker for Christmas and I'm currently on my 3rd smoke and I'm doing a beautiful large pork butt today. I can see the coals are important for the burn and consistency of heat. I tried using the last of my Kingsford combined with some fancy wood charcoal. The heat was originally burning too hot, 300 degrees. I had to keep closing down the vents to almost nothing. One thing I did was use too many coals in my chimney which really kicked up the heat for awhile. Anyway, thanks for the instructions and I look forward to viewing others you have on KZitem.

Hi Randy, I appreciate the kind words. Too many lit coals will make the WSM run hot, but it does normally run hot and is hard to maintain temps for the first 4-6 cooks. Those first handful of cooks will build up a seasoning layer on the inside of the WSM. Once that happens, you should be able to easily run 225F and maintain temps consistently. Have fun with that pork butt and Keep that smoke rollin'!!! Oh, check out my video on pork butt cooked hot and fast on the WSM. I cooked it at 300F and it turned out very well. Pork butt is able to handle the higher temps because of all the fat in the meat. Enjoy!!!

mines been on since this morning its been 7 hours now lol it didnt get bark till about 168 so i wrapped it in foil then , went to put it back on the WSM smoker and temp skyrocketed to 390 -400 its 92 here today and sun was directly on it by the afternoon so i put it in the oven at 275 its coming up in temp , its at 180 now ill start probe thermometer at 190 i wasnt going to wrap it but its a choice brisket hope it works out ! ok 8 hours in flat 206 point 202 the main thing is it feels like room temperture butter, letting it cool with foil open for 15-20 mins, then into the cooler for 2 hours it came out great ! thank you ! it was moist and tender throughout the probe test is the ticket ! Troy is Awesome ! could'nt of done it without T Roys help

As long as it's tender when probing, you should be good. Flat will probably be a little dry, but Point should be excellent!!! With Choice, I usually inject the flat with beef broth or something to help it out.

There's no set time for cooking brisket, you need to go by how tender a probe or toothpick slides into the meat. It should slide in like room temp butter. Having said that, if you must approximate cook time for brisket, it's usually around 2hrs per pound for select or choice here in the USA. If you choose Prime or Wagyu, it's more like an hour per pound because those higher grades have more fat content and fat helps the inside cook faster.

No worries, you’ll love cooking on the WSM. You really only need a quick read thermometer like the Thermapen I use from ThermoWorks. If you wanna splurge, the ThermoWorks Smoke is a great choice to monitor both meat and cooker temps.

Glad to see a WSM Brisket from you Troy. I use my WSM for all my Briskets and Pork Butts now. I almost always use Kingsford Blue and buy when Lowes has their sale... 2 x 18.6 lb. bags for $9.99, but I sometimes use a local supermarket chains charcoal. My brother works for them and gave me the scoop that it's made by Royal Oak which I've tried and liked. And when they have its on special I buy it and it's does fine and gives me a good burn time. But some of those store brands certainly don't come close to Kingsford. Also, my buddy has a 22 inch WSM and I've cooked on it a lot... I have the 18.5 inch WSM, and I've noticed that if I cook equal sized pork butts or briskets, there is very little internal temperature difference between the bottom and top piece of meat... maybe two degrees. Now with the 22 inch WSM there often seems to be about a 5 or 6 degree difference. Anyone else have the same issue? Also, on about 12 lbs. of charcoal, I get up to 18 hours cook time at 235 F. on my 18.5 WSM where as with the 22 inches I have to use the whole 18.6 lbs. bag of Kingsford. I think I may get a 22" WSM for doing large racks of Ribs... with the 18.5 WSM, I have to cut my racks of ribs and use a rib rack and I also have to limit my whole packer briskets to 10 lbs. or less, or brisket flats of 9 lbs or less . With that 22"... you can cook some nice big racks of ribs as well as the larger briskets. Just comparing notes... and want to see if other agree or have the same experience. Best wishes my friend... Hey George, you are spot on with your comments brother. JB uses an 18.5 inch WSM and gets the same burn times that you speak of. The most I've gotten on my 22.5 inch is 15 hours and I think I was cooking at 210F for a brisket. And yes, my butt was 5-6 degrees lower than my brisket. I think perhaps the brisket was blocking some of the heat from getting back down to that lower rack. Thanks for the support George!!! Cheers brother!!!

Troy I'm a new sub and I have been using HEB BRAND charcoal for the past 20 years, some times in n my stick burner. I've got an Old Smokey ,a char griller,and a homemade off set wood burner! Pro's and con's about charcoal ! I've tried them all and go back to HEB ( MAINLY MESQUITE)!

HEB does have some good products, but they have worked out a deal to put their own name on well known products, so their products are great.

Excellent video! I cringed when you were barefoot loading charcoal from the chimney, then the dog went towards it! But that brisket looked excellent. I'm going to smoke a 14 pounder tomorrow on my 22" wsm. Haven't made one in a while, so I came here for some tips!

New subscriber from over here in North Carolina! I've always wanted to smoke meats but never got up enough nerve to try it. I'm good on the grill so surely I can do this. After watching your very informative videos I believe I'ma get me a WSM now and give it a shot. I will get better at it over time. I just enjoy cooking. Glad u make these videos. Keep em coming! 🇺🇸🇺🇸

I was in HEB today and almost got the 'store bought' HEB brand charcoal but thought 'nah, better not' and went with the Kingsford Blue. The Lone Star Beer cap was a nice touch too.

Thanks Tom, the chimney trick works great when you just need 10-15 briquettes lit. The brisket was ok, but it sure wasn't as good as that Prime brisket from Lobel's. Man, that one was killer!!! Have a great week Tom!!!

Thing about salt is you can always add more later. That's why we have salt and pepper at the tables here in merica. That's what I have about comp cook shows with judge's. Erbodies salt like is different.
