thanks for the lesson. Until now, I'd kinda been gently adding air, probably for like 10-12 seconds, so I was surprised to see you only spend about 6 seconds. The last 2 days I've been trying that - 6 seconds of more aggressive stretching, spending more time churning and incorporating. Seems to be improving my latte art consistency. However, I'm on a Bambino Plus, so, diff steam wand but not sure how diff. It's a 4-hole wand but I don't know if the steam power is weaker than the Dual.

I increased the steam temperature based on your tip and also found out I've been stretching milk for a bit too long. Now my milk truly is perfect. (This was a weird sentence to write lol.) This is great, I learnt steaming from you using my Breville Infuser and it's similar to the dual boiler but not as powerful maybe? I find turning up the temp on the non-dual boiler Brevilles help raise steam temp as you said but you get a hotter espresso (which in most cases is ok I think). Also - I had to rip a fresh $100 note to learn that sound, would recommend 👀

Best teach on how to steam milk on the Breville (I can't program mine) but the descriptions on what happens with the vortex when positioning the wand is enlightening.........now to watch your teach on latte art...... when tearing a $100 bill it sounds like crying....

Glad you enjoyed! If you are working with a slightly lower end model vs the dual boiler, you might find the steam wand a bit too weak for that trick but you should try it anyway and let me know!!

@@EmileeBryant I can make hearts, but I want more art. Two things working against me 1) my steaming - with your teach I'm working on that. Today was better, but I think I need more foam. 2) My cup size I think it is too deep. I can't get the pour spout low enough before my milk runs out. Side note: I don't brew coffee for a living and the model you have I believe is the Breville Oracle Espresso Machine.......much too expensive for my daily cup of brew. Is there another model under $1,000 you recommend? Or perhaps a stand-alone steamer.

Yes. But Honestly with commercial machines I’d be very gentle with the air as they tend to be stronger and and add a ton more in a shorter time

Great video as usual!! I am not sure about this been the place for requesting content haha but I struggle a lot when steaming for smaller beverages… meaning flat whites. It is a 150ml cup, 40 ml of espresso (just 110ml room for milk). I hate wasting milk, could you do a quick one on steaming something like 100ml milk? I have tried not fully opening the valve, smaller jugs… everything I guess. Thanks a lot and keep your videos as fun as they always are!

I have a few tips! But anything aiming for a corral or macchiato size drink, most of the time produces a bit extra milk waste. Though for smaller flat whites it should be possible without any or much waste! I will make video soon!

Hi Emilee, I'm a noobarista with the Breville 🥳 and usually get a good milk foam 🎉 the issue is when I pour the foam head is almost non-existent on my lattes 😭😭 do you have a tutorial on perfecting 'the pour' 🙏 sure you do and I'm just being too lazy to look 🙄😶😬 Thanks...and great vids ❤

I don’t tend to measure in time because machines can vary so much. But it’s probably close to 30 to 40 seconds.

@@EmileeBryant Like start-up time (important but often hidden negative aspect of cool and expensive expresso machines), the time to froth is also important (in my opinion). My current DeLonghi does it in around 90 seconds, but the Profitec Pro 600 in about 12-15 seconds. Big THANKS anyway for a quick and good reply ! ps. extra plus for the 100-dollar note joke :)

okay okay so i have a similar Breville and I'm so glad I found this videoooo. Question tho - I know you said we need to keep moving the milk in the pitcher until we do our latte art design, but how do you keep doing that if you have to turn the dial to turn the air pressure back on to clean out any milk that may still be on the wand? do you just say eff it until you pour your latte art? or is a 3 second clean-the-wand break okay and you can put the pitcher down?

Hey! You can let it sit for a few seconds. Some people rest the milk longer. I just dont prefer for too much foam to rise prior to pouring to get that shiny pop!.

Hi Emilee, when I steam with my ECM classika, not sure its the steam issue or whole milk issue, instead of the paper sound, its more solid/heavy and create big bubble, it feels like the milk is more "solid" than usual, feels a lot of resistance and the steam is hard to roll them. It was ok earlier, just start to appear recently...

You know, I always see the professional latte artists creating really intricate lines and dots... Yet when I try to add a couple of dots to my design, they just look like watered down blotchy mess, instead of a well defined foam dot. I can do a decent heart / tulip / rosetta... but I can't figure out how in the hell they are getting those dots straight from the pitcher. Any advice?

I have tried to make the dots before, and it just looks terrible! This person's milk does look much thicker than my steamed milk... I might try getting a thicker consistency. If you want a machine that makes coffee identical to cafe (9 bars only/extremely great steam pressure and quality built) then go marzocco. For the price and flow capability if you slayer mod it, the breville is more for your buck. Though the steam wand is capable… it’s not as powerful or fast as marzocco.

There's a big price difference. Breville Dual Boiler has way more features but it's a plastic machine built in China. LaMarzocco is like a Ferrari, a status symbol handmade in Italy. Don't think either one will make inherently better coffee, unless you have a super sophisticated palate and want to play around with lighter roast specialty coffee beans. Then BDB will be better as you can tinker with all sorts of parameters. If I had unlimited money I'd buy the LM but honestly spending $5k on an espresso machine is silly. I spent $2k on my machine and I still wouldn't tell someone how much money I spent on a machine just to make lattes.

Can you please do a guide on pouring art into cortado glasses? Been really struggling to get consistency down and don’t know what I should be changing. Also maybe talk about tips on steaming very small amounts of milk? I use a 6.8 oz pitcher for cortados to have very minimal milk waste but i tend to over stretch the milk.

I'm interested in this, because a real cortado has VERY little milk. I'm also guilty of over stretching the milk I think. It's a nice creamy feel, but not so good for art 😔

Probably not. You should purge the steam just prior to using it so it can warm up and expel and extra condensation. Also you might have a different model? The barista pro/ almost all the other brevilles are not dual boilers so they take longer to give energy to the steam. Let me know!

That machine is a bit weaker in general but you’re welcome to try the technique!! I go more to the side for a better vortex with softer steam wands. A ton people are very successful on the bambino! I know lance has videos on it form way way way back

I usually end up with foam sitting on top of the milk and not letting me start trying art due to a full cup and/or too much liquid. Less milk in the jug, more mixing?

I can make another video about steam tips but KIIIIIINDA. There is a balance of steam hole amount/ size that is perfect for each person and machine. More holes can mean more jets of steam thus more capability in injecting air but a faster realms of temperature. So if you work on a reaaaaaally cheap machine that doesn’t hold a lot of heat and pressure in the steam boiler or exchanger, you might see a huge dip in pressure when steaming with more holes (again depending on the size too) And the opposite is sometimes true that less holes hold the steam pressure better but inject less air efficiently (kinda) and heat up the milk slower. Than there are weird outlying products like the “foam knife” and “weber variable steam tip”
