I had sewn 2 tea towels together to make a large bag. I cut my loaf in half and always store the cut sides touching. I wrap the loaf in a beeswax sheet then place in my bag, tie with a ribbon. Bread does not get hard and dry, usually lasts up to 5-6 days, depending on the humidity in the air.

I'm 79 yo, just getting BACK INTO bread baking....I used to bake bread and all kinds of stuff but then my husband became diabetic and I had to learn how NOT to bake all the time. That was difficult. Yes, he is still a diabetic and we do eat bread, muffins, cookies etc on occasion but not every day. Or maybe as a treat for him depending on glucose levels. That being said, we've had to depend on store bought bread for so long and I learned to freeze it and take it out as needed. When you have store-bought and you notice that it seems to stay edible for weeks at a time, you know there are so many preservatives and other non-healthy additives that you should not be eating it. I'm into sourdough breads and I'm learning there are so many things you can do with the discard and they are wonderful! I will say that when I get on a baking spree (I need that to satisfy my creative self) 90% of the results go into the freezer. We love to place a frozen cookie in the microwave for 10-15 seconds or so and eat it. It's like it just came out of the oven! I'm loving that I can still be creative in the kitchen, use my freezer to keep it edible, and enjoy the fruits of my labor without killing my husband! thanks for sharing all your videos, especially the grains etc. I like milling my own hard red winter wheat berries as I need it for a recipe.

I don't know if you are familiar with the research, but fmf that still has all the vitamins and minerals in them, can drastically help your husband with diabetes. The processed grain and not the grain itself is the problem. Sue Becker has more info on KZitem.

I love the linen bags! I make 2 loaves of sourdough sandwich bread every Thursday. I cool them completely, slice them and I place squares of parchment between the slices and tuck these slices into my linen bags and into the freezer they go. 👍😉 I remove the papers after the slices are frozen and save them for the next baking day. 💕 I take a slice for hubby and I each morning to toast it with our 1 fried egg, I take a couple slices out to sit and thaw on the counter while I start the sandwich preps and then it is soft for our shared sandwich, and I do the same for French toast. My 2 loaves are usually gone after a week (with grandkids visiting during the week for sandwiches or toast) and anything left, usually 2-4 slices, goes into bread pudding or croutons. 👍🥰 Thanks for sharing your lovely video! I heard that you can freeze the whole loaf then refresh 10 minutes in 350 degree oven. I have not tried it yet but I will be working on that theory this weekend as one of my loaves from last weekend is in the freezer as I write this. Update: go with 15 minutes at 350 or after 10 minutes turn oven off and wrap back in foil and place back in oven. It was slightly still frozen in the middle. Taste and texture was the same as original.

I keep mine on a cutting board with the bread knife and I throw a tea towel over it. I do slice a thin slice of heel on the first cut and keep it against the cut side as sort of a protection for the cut end. I find it helps keep the moisture in.

You could beeswax the linen. It acts like a natural “plastic”. It will be more stiff, but hand washable. And you can just my some beeswax and melt it gently, and spread it on the cloth.

We love the square sandwich breads that we make using a 9x4 Pullman loaf pan, which easily makes a 2-lb loaf. I’ve not had a problem storing in the plastic bread bags ( not store-bought bred bags).

The plastic free way that I found works best for bread is a cotton flannel bag and then tucked away in a bread box. I think ziplocks hold too much moisture and lends itself to faster molding, the double storage doesn’t dry out too quickly but it also doesn’t create a rainforest

I’m fortunate that the hispanic store near me has those big heavy mil bags for customers to use when selecting their bread products. I reuse those and will definitely use for my bread loaves now.

I made a linen bag for my homemade whole wheat loaf. The center was fine but the crust was very hard. I’m going back to ziplocks for now. I haven’t had mold issues with them and I wash well to reuse them several times.

I buy bread storage bags from Pleasant Hill Grains. I bag and freeze them once the loaves have cooled. To use I just let them thaw in the bag overnight. I don’t slice until I’m ready to eat to keep the loaf fresher longer.

I store my crusty loaves cut side down on the cutting board. The interior stays soft as well as in a bag but the crust says way nicer.

thanks for the tips! I've been storing my bread in a ziploc bag with the cut side down, but I don't entirely seal the bag to allow some air flow. I then put it in a paper bag and clip with a clothespin. Seems to work well my bread lasts 6-7 days. But I just bought a bread box at an estate sale for 50 cents! Now I may need to alter my method.

Thanks for this! Super helpful. I was getting mold and I think I'm not letting it cool completely. I also cut my whole loaf into slices and then store it. May try not doing that and see if that makes a difference. But yeah by day 4 I definitely start seeing the white spores starting on the bread. Good to know about freezing it too. We're taking a trip soon and I'll have to freeze and bring some with us.

Ah yes if your bread is still hot AT ALL and you put it in a bag, that steam will moisten it! I think it does go bad a bit faster sliced in my opinion 😄

To freeze my sourdough bread: slice the bread, wrap in baking parchment (minimizes frost), insert into zip lock bag. I have found my breads retain flavour for months and are amazing toasted.

I use the 1 gallon twist tie bags which are not as stiff as the zipper bags (and cheaper) and it keeps fine for the 5 or 6 days a loaf lasts me. Walmart has them in their brand as do most stores.

Ok. Today I found an old Breadbecker video about pasta. I used their recipe, and yes they recommend Kamut, but in the real world we use what we have right!? I did macaroni . It held up great and were so cute. They cooked in a out 5 minutes. As for taste there are four of us and everyone but me loved it. I thought it was a little bland, but everyone else cleaned their plate. All in all I was happy with it. Next time I think I may do the taboo and sift half of the flour and use half as is.

Durum can also be used (that is what is used today for pasta, and it is the child of kamut anyway). Ultimately, the taste and texture will change depending on what type of wheat you use. Keep experimenting!

Just me and my hubby...we use 1 loaf a week for lunches. I put my other loaf in my plastic bread bag it hold a 2 lb loaf with a sheet of paper towel on top of the bread loaf then put in my refrigerator Freezer. I let it come to room temp next morning I slice it and it will last about 3 to 4 days. No problem. So I can make 1 batch 2 loaves every 2 weeks. In regards to freezing I have great success. I let it cool completely, slice it, place it in a freezer bag, and freeze. When I'm ready to use it I just set it on the counter to thaw and then we eat it as if it was a fresh baked loaf. The slices are as tender as if it was freshly baked, so we use it for sandwiches without needing to toast it.

For what it is worth, in north GA I've been able to keep my home milled breads for a week on the counter and the last slice is still as good as the first but I store mine in Ziplock bags. A small loaf fits fine in a gallon bag but my Pullman loaves I cut to make them fit or cut in half and put half in the fridge. I have done home milled banana and pineapple quick breads, making 2 loaves at a time. I put 1 in a Ziplock on the counter and the other in the fridge. We go through those faster so we probably consume both small loaves in a week or so. When I make a larger batch of sandwich bread or rolls I put the extra in the freezer, in freezer Ziplocks. I do not slice loaves. When we are close to using up the one on the counter I pull out the frozen one and leave it on the counter to thaw. Its usually thawed in just a couple hours. I am not a fan of the Ziplock bags for the reason that since they are wider than necessary you need to squeeze out the air more carefully and the men in my house aren't that attentive... which is a whole 'nother problem. LOL I am tempted to buy the bread holder that condenses down in size as you use up your loaf. I've only seen it on Amazon and my gut tells me its not airtight enough.

Just looked on Amazon and was able to find a 4 pack of reusable thick plastic bags that are 2 gallon sized, for about $25. I make 1lb loaves, so I think these will probably fit 2 of them (bag is 13x13. there are some smaller ones that are about 11x11 but have a gusset at the bottom the is about 2.5inches which would help with the height of the loaves - they are under $20 for 4 bags. I may just give these a try. I'm fighting for a middle ground between dried out bread and moldy bread! From a frugality standpoint primarily, I'm trying to steer away from single use plastic items - these are still plastic but they are thicker and made to be washed and reused so will last longer. They are not dishwasher safe, but I hand wash my dishes anyway so no biggie there.

I cut the bread, flash freeze, then put in reusable bags, and they stay in my freezer. I find the bread drys out a bit. I toast, and now I butter both sides. A two pound loaf lasts me 2 wweks

This is definitely a issue for me. I have been wrapping it up in a flour sack tea towel. I have tried the ziplock bag and I just have not liked the bag.. Well I now know why. I probably have not let it cool long enough. 😂 Muffins and cookies in my house don’t last long enough to go bad even now with just the 2 of us living here they will go pretty quickly. My brother lives across the street from me and his family will always help me eat anything that is homemade

I made my first loaf but it was to sticky. It did not rise at first after 40 minutes but did in the oven. When took out after really dark it still we heavy and abit moist in the middle. Tasted fairly Well. I can't wait to try again with a bit more Flour!

The actual "linen" bags you got and gave a link to appear to NOT be real linen. I knew to check because I have been getting "into" the advantages of flax linen and while doing so I have seen a LOT of sellers advertising as LINEN but then when you look at the material they list they will say "cotton linen." They are taking advantage of the old-habit of calling all the napkins, tablecloths, etc. "linens" whether they were truly linen or not. I am so sorry to tell you this -- but it MAY be they are telling the truth when they say cotton linen and you may be in for a happy surprise if you get some 100% flax linen. Thank you for your GREAT informational videos. They are very helpful.

All that said, from the tiny bit of research I have done on true linen bread bags I do not see them being necessarily better for storing bread. The beeswax wraps look very good to me -- and can be hand-washed with cool water and mild soap and reused.

Our “fresh ground wheat,” home made sourdough bread, needs little storage. It hardly gets to room temperature. We sure go through a LOT more butter.

Great advice. I started milling my own grain about two weeks ago. I pulled out your grain calculator and figured based on what we used before of bread I would bake about three maybe four loaves a month. NOT! My family love this bread so much I bake bread 3 to 4 time a week. Two weeks ago I received a 35 pound bucket from Breadtopia and it is half empty. Happily, I picked up my first Azure order this morning with another 35 pound and 15 pounds of Spelt. So far I have been making loaves and dinner rolls but I just bought a tortilla press to start making those and cannot wait to try pizza crust and hamburger buns. I am wondering a out pasta. I have an electric pasta machine and I wonder if I can make pasta from hard white wheat berries? Can you tell me? Thanks . I love your channel.

@@Mindy56743 pasta is best made with durum wheat. Many years ago my family made pasta with all purpose flour. It will work fine, but I find I get better results with durum wheat (which is available from Azure Standard)

I have been watching your channel for a few months now.. was able to get a refurbished grinder.. Was only able to get the hard red wheat ..made some yeast rolls and my family HATED it.. it was they only wheat I could get everything else was sold out.. Felicia, we get about 4 weeks of intense heat in our summers (the rest of the summer is just beautiful), but I was wondering if you would even be able to bake in the summer - because I can't! - without air conditioning. I'm thinking about trying to make my bread in a Dutch oven on the BBQ. Have you done that yet?

Well I actually have AC. Otherwise wowza I would never bake inside the house lol Historic Florida crackers always had their kitchens outside the house for this reason (and so their house wouldn’t burn down if there was a fire). I’ve never tried it in a Dutch oven on the BBQ but it is on my list!

Having lived my first 30 years in FL, I can tell you that I honestly have no idea how people survived without air conditioning in that state. Its not just the heat, its the humidity. It can just steal your breath away sometimes! I don't miss it one bit. Where I live now I can actually enjoy all 4 seasons. In FL there are only 2... hot and freaking hot. Swimming in the pool every Christmas while listening to Bing Crosby sing White Christmas just makes you want to cry.

I havent tried Bread on BBQ yet but each October during Feast of Sukkot we bake biscuits in an old granite blue enamel covered roasting pan with biscuits on smaller pan inside on trivet. Over campfire they rise perfectly and taste better than ones baked at home.

@@gracef244 not sure I can explain it well and can't post a picture in comments. Basically place a covered dutch oven directly on coals of campfire. Let heat up about 15-20 min. Put a trivet (we use small rocks) in cast iron Dutch oven then a pan of biscuits on trivet and close. Check in 15-20minutes. If risen but not browning we use a shovel to scoop a few ashes on top of dutch oven. If no cast iron, use a blue granite enamel covered roaster but put it on a rack 2-3 inches above coals since those are thin walled. I plan to try yeast bread during our next campfire

I need twist ties....do you have a link to the ones you use? There are so many on Amazon I can't tell which ones would be best. And you certainly can't tell be the reviews....they are all over the place...thanks for any help

Just use rubber bands. Twist the bag opening, fold the twist and place a rubber band. It makes it easier to remove and is easier to manipulate than twist ties.

If l am not baking long enough will that make the crumb get dry almost overnight? Does it sound like l am adding too much flour? I try to not add too much flour and leave it a little sticky. Could it be l am not kneading enough? My husband will not use my bread for hot dogs cause he said it cracks and doesn't bend around the hot dog. Stored in zip lock bags. I have started to make very small loaves so it is all eaten in one day. No mold. I do totally slice the loaf. Is that bad?

@@GrainsandGrit l have used yours. l used the pullman pan recipe. I used a recipe from Homesteading Family. I have tried a lot and find it doesn't matter which recipe l use. The loaves come out looking beautiful, taste great, etc. I do use Spelt grain fresh milled 100%, or store bought wheat flour, or hard white wheat fresh milled 100% or 1/2 & 1/2 with white all purpose.

@@sharonking7978 ah ok, well as far as using any store bought flour that may be contributing to the difference. The bread I use is always 100% freshly milled wheat. Any store bought flour will change things up. Do you have drying issues with 100% freshly milled wheat loaves?

@@GrainsandGrit l don't remember cause l have been adding white flour to try to make the bread a little lighter and less dry. It seems 100% never makes a smooth dough. It is always a little lumpy bumpy even when it is sticky.

@@sharonking7978 Here's my thoughts based on my experience. First, make sure you are using recipes for fresh milled flour. Whole wheat absorbs more liquid, so using a recipe for store bought flour will require more liquid with fresh milled wheat flour. Second, *a lot* can depend on your home temperature and climate. On a rainy day I will need to add more flour and if my house is hot I need to add less. Third, test for doneness with a thermometer. I try to insert it in the side of the loaf and aim for the middle so it doesn't touch the pan. I find sandwich bread is done at 190° and quick breads at 200°, but your oven may differ by up to 10°. I'm thinking if its dry on day 2 it is likely that you are either over baking or cutting into it before it has completely cooled to room temperature. Adding more flour is just going to make it a denser, heavier loaf... not really dry it out unless you are adding several cups extra. Honestly, most bread recipes are pretty forgiving unlike other baking recipes. All that said, I've only had experience using hard white wheat, so perhaps there is a learning curve with Spelt I don't know yet. I'd search for a spelt sandwich loaf recipe or whatever you are wanting to bake to make sure it is formulated to that grain and its characteristics. I know spelt has a lower gluten content, so it won't rise as much or be as soft unless you add a dough conditioner such as vital wheat gluten or sunflower lecithin. On a sandwich loaf, try adding 1 egg if the recipe doesn't already call for it. Egg will create a slightly moister and softer loaf. Egg can also make your bread rise higher and more evenly when used in yeasted breads. *sigh* Things that got lost in just a couple generations that our grandparents or greatgrandparents just *knew*!
