When you find tomatoes and red peppers on sale, usually in August, early September Canadian stores sell them in crates of half bushel boxes. Here a procedure I use.
1. Wash tomatoes thoroughly
2. Cut off any blemishes
3. Cut into smaller chunks
4. Pour in pot and cook with average heat until it boils
5. While boiling, sterilize the jars in the oven at 250 degree for at least 15 mins
6. Also boils the covers without the rings to sterilize them, just until they are about to boil.
7. Once the tomatoes are boiling all through, pour them in the hot sterilized jars. Handle the jars carefully as they are hot at this point.
8. Clean the jar tips with wet paper towels
9. Close jars with the covers and titghen the rings and then turn jars upside down to all them seal - leave them upside down for at least 5 mins.
10. Put them right side up after then and store in the pantry or anywhere you have space.
I usually store mine inside that tomato crates from the store. They are sturdy.

Twelve 1 litre jars will be good for a box and a third of tomatoes. Or 2 and half crates of red pepper.
