Fellow bbq nerd here! I can honestly say that I've probably seen 97% of youtubers brisket and brisket trim videos, and they're all the same. Nothing against any of them of course, but I took away at least 5 good MAJOR tips from your video and your other videos before this. Your channel is top tier, straight to the point, no cuts in between and I have been recommending it to all of my bbq nerd herd haha. I respect the fact that even though you cook in volume on bigger pits, but you speak for the typical backyarders like most of us! Also thank you for clarifying that the membrane on the flat isn't silver skin and it reassured me to just leave it alone. Thank for the very informative video. That was more informative in one minute than most in twenty minutes. Most videos will show you how to trim a brisket. You showed not only how to trim a brisket, but, why. This has got to be the very best brisket trimming video I’ve seen. The little tricks you explained will save me unlimited time and damaged meat. Indeed a great video! Since diving into the offset smoking hobby I have watched numerous brisket trimming videos and this one is certainly one of the best. Well done sir! It still kills me to cut (trim) that brisket but it certainly makes for a better outcome!

I'm a total newbie with brisket so I have a question. When shaping the flat end why do you not cut the meat away but leave the thin fat layer so it hangs down over the end to protect the lean from burning?

@@MeatNGreetBBQ I don't do IG but maybe I can explain better. You cut off the pointy corners so they don't burn and draw moisture from the rest of the brisket. I was wondering why you didn't cut just the meat part of the corner away and scalp back the fat on top of the corner so there is a little fat flap you could push down over the cut surface you made to protect it from the heat. Love your channel thanks for sharing the knowledge.
