We have lots of elephant garlic but I've never tried them for leeks! Must do that soon...thanks for posting! Oh, Klutzy Gardener sure is a fast digger! :)

Great info, thanks! Encouragement for the other commenters: it doesn't take that long to build up A LOT of plants. I started with 5 cloves (one head from a fellow Gardener) and a few babies attached to the roots. The first fall I planted them all and early summer when they were ready, I replanted all but one head (to eat) so the remainder were spaced out to multiply into large heads for the following harvest. By that second harvest the original babies were full grown heads and I had so many babies and rounds that I was able to keep half the heads for eating. The third harvest was last summer - this is the exciting part - I had enough mature heads to cure for fresh eating, dehydrate for powder, and fermented 3 quart jars packed full of sliced cloves. Oh, and I shared at least a dozen heads with babies so others could grow! We still have a little left a year later and ready to harvest again. Since i have enough to sustain us for a year of eating, I want some to naturalize in a different spot this year. Hap, here's my question for you: when you pull your clumps, do you replant a few to keep the clump going? Or are there adequate babies underground to keep naturalizing in the spot? I've always respaced to let them grow large; so, I'm wondering the best way to ensure big healthy clumps come up every year. I appreciate the knowledge you share and the tone of your content is a pleasure to view. Please keep up the good work!

***** A less haphazard way to use elephant garlics as spring leeks would be to put a few cloves every year in a perennial bed, and then let them grow and spread for 2-4 years. Then just dig them up in the spring for leeks and plant something else in that hole (since garlic are best planted in late summer or fall). Happy gardening!

Hi ya Hap! Every time I see ur yard, I SMILE, but lose it when I think if u lived on my block how u’d be turned n to the city by the neighbors for not having a clean cut and pristine yard like theirs, it irks me to how many Jones’s their r to us sensible odd balls who want to let our yards be till wild edibles show their beautiful self, guess I can add the runaways to that list (garlic). When spring comes and yard gets to growing, you’ll find me looking closely at the ground, I’m looking for baby lambs quarters and Polk weed growth, I mark them by pulling grass away before I mow, I’ll not mow my food down! which I’ve let grow for, don’t recall exactly, 11-15 years, u might be able to answer a question for me, all those years, nothing has ever bothered my Polk, last summer, I guess something ate every single leaf off every plant, would u know anything on this??? Do u think they will come back this year, I hope so cause I so love my wild edibles. I was wondering if u have a link on ur garlic series??? Thank u

Hi, joy bickerstaff! I'm fortunate to live in an area where there's not such a high concern over how a yard looks. I'd be in trouble, for sure! I'm glad you enjoy eating wild plants, too. And that you like poke weed, too (Phytolacca americana). So many folks are afraid of it or don't know how to cook it. Established poke plants have strong root systems -- people try and try to get rid of it by cutting it back, without success. So, unless yours got some disease that killed the root, it should come back. Please let me know how it turns out! ( saw ur name n a comment) Even though I like Hap, I’ll call u by ur name, I’m surprised that u never corrected me) I’ve a few questions 1) plant the cloves n fall and harvest n spring??? 2) Do I cover them with leaves or straw to protect them during winter??? 3) How did the garlic come to be n ur yard??? Sry, but I don’t understand, I mean, aren’t the plants started from cloves??? Thank u

Hi, joy bickerstaff! I liked being called Hap, lol. Yes, elephant garlic grow from cloves and turn into bulbs that split into more cloves. But if they aren't harvested every year, the cloves left in the ground split and then the one plant becomes a clump of plants the next year. I'm not sure when they were first planted in my yard. I've been here 25 years and they were already weeds that had spread by themselves, way back then. They just keep planting themselves in different places. And then some years, I do plant some cloves in the fall, in a regular garden, for a traditional harvest of big cloves the next summer. I think the mulching is more important in the spring and summer, in the garden, to keep weeds down and to keep the soil cool and moist so the plants aren't stressed. They seem to hold up to cold weather pretty good - even below zero!

Haphazard Homestead Hello Hap! I sooo look forward to having this plant grow wild n my yard!!! I can’t say u wouldn’t understand why I want it to, because u know why, u wouldn’t let it grow wherever it wants otherwise 😃 doing this will be closer to my having a wild edible yard that I’ve wanted for quite some time now! ((( if u know of other plants, domesticated or wild that I can add, PLEASE, PLEASE, let me know))) I seriously appreciate the info u gave me here, which is important to me, that’s why I wrote it down and penned to the board as not to forget till it’s stuck n my head. I know it will be a few years before I get the results u have, but it will be well worth the wait!!! Thank u sooo much!!!

Elephant garlic is worth growing. They are so versatile and not just a garlic clove. Other garden crops are like that, too -- they can provide more than we are used to seeing in the store.

I ferment the first-year rounds. I don't cure them, just pull green and ferment right away because they pack a much bigger flavor punch. They are so pretty in the jar too!
