Hey Everyone, today we're going to talk about how to use wood in the new Char-Griller Gravity 980 cooker for smoking food. I've had this cooker for a while now and there are a couple different ways you can use wood in your cook to add smoke and enhance your meals. Each way works a little differently so here is what I've found out. The two ways you can add wood to your cook with the gravity 980 is either by placing it in the ash pan which is the traditional gravity way to do it, or you can mix your wood chunks with the charcoal in the hopper. Neither way is right or wrong, but there can be some differences between the two. If you're going the traditional way and place your wood chunks in the ash pan, what I have found is you need to cover most of the ash pan with wood, this increases the probability that falling embers from the fire above land on wood and begin the smoking process. Also, I would make sure you have the wood in the ash pan as soon as you light the gravity 980 off, this gives the wood plenty of time to have embers fall on it and get to smoking. Now, if you want a little more quick, more intense smoke you can mix your chunks straight into the charcoal. The trade off here is if you mix them in too high they wont smoke till later, and if you mix them in too low they will burn up right at the beginning and you may have not gotten your food on yet. Not a big deal but this way will lack some precision, unless you burn a small enough fire on a short cook that you can open the lid and drop a piece of wood straight in on the fire so that it catches and begins smoking immediately. I'll do that sometimes on cooks I know will be shorter like chicken for instance.
