I’ve Been cooking backstrap for the last month now and I’ve been trying to find the best way to push that flavour into it. Rosemary and butter could be the answer

I cooked some last night and it was the most tender I have ever had. It was so soft it almost cut like fish

arguably the best cut on a deer. inner loins are awesome to but you cant beat a pan seared chunk of backstrap 🤤🤤🤤

How tender is it cooking it like that, I've never done anything other than medallions and that same recipe has been in my family 5 generations, deep fried with egg wash flour and other seasonings, this generation it had changed to contain dan o's in our family cook book. Just letting you know you and stale cracker made it into our history book ❤

Not sure what we learned there, other than placing a beautiful 1/4 of a deer backstrap in a hot skillet. I've been processing and cooking my deer for almost 50 years, and certainly the backstrap is awesome. But I really think I'd take the top round. Literally cooking some right now, LOL

I don't know anything about this stuff. why not cook it with that white stuff? isn't that fat? won't that help it cook and give it some flavor? if it is fat, can you use it to lubricate the pan?
