Baghare Baigan is Traditional Hyderabadi Recipe made with brinjal , in Hyderabad most of Vegetarian recipes are called baghare recipe from which this name baghra comes, Baghare Baigan is old recipe in which specifically only dry spices are used and to thicken the gravy roasted peanuts, coconut and sesame seeds paste is added also baghar consists of kaloji and meethi seed which gives it a unique flavour, serve it with qubooli, Baghara khana , jawar ki roti, do try it and share your feedback how it turns
Ingredients
Baigan 300 gm/ brinjal
Peanut 100 gm/ Phalli
Coconut 100 gm /Kopra
Sesame Seeds 100 gm /Till
Cumin 2 tsp/ Zeera
Coriander Seeds 1 tsp /Dhaniya
Oil 1 cup. /Teel
Tamarind handful / Muthi Bhar Imli
Salt to taste /Namak
Turmaric powder 1/2 tsp / Haldi
Red Chillie Powder 2 tsp / Lal Mirchi
Curry Leaves few /Karyapak
