Try these delicious and authentic Hyderabadi Dum Ke Roat / Semolina Cookies which are not only crunchier and crispier outside but also softer inside.
Maimoona Yasmeen's Recipes
Ingredients:
Semolina / Rawa : 150 grms / 1 std cup
All Purpose Flour / Maida : 200 grms / 1.5 cups
Sugar / Shakar : 200 grms
Almonds / Badam : 50 grms
Cashews / Kaju : 50 grms
Sliced Dry Coconut / Sukha Nariyal : 2 tbsp
Raisins / Kishmish : 2 tbsp
Cardamom / Elaichi Powder : 1 1/2 tsp
Baking Powder : 1 1/2 tsp
Saffron Sticks / Zafran : few
Orange Food Colour / Khane ka Zafrani Rang : few pinches
Milk / Doodh : 1/4th cup milk
Clarified Butter / Pure Ghee : 1 cup
Sliced Almonds / Badam : for the decoration
Procedure:
1. Grind together coconut, cashews and almonds into a powder.
2. Grind sugar into a fine powder.
3. Add all purpose flour or maida to a broad container or a bowl.
4. Add semolina, the ground powder of coconut, cashews and almonds, ground sugar, cardamom powder, baking powder, raisins and clarified butter or pure ghee (a good amount of clarified butter will not only add to the taste but will also help the cookies in expanding or spreading and will also make them softer).
5. Add saffron sticks and food colour to the milk and mix well.
6. Add this coloured milk to the bowl.
7. Mix thoroughly and gather to form a dough.
8. Leave the dough covered with a damp cloth for about 1 hr.
9. After 1 hr, mix the dough again and taking smaller portions, mold into round medium sized cookies.
10. Decorate each cookie with a sliced almond.
11. Arrange on a baking tray with a greased baking sheet.
13. Leave enough space in between the cookies to facilitate the spreading.
14. Pre-heat oven at 180 degrees centigrade for 20 min.
15. Bake at 150 degrees centigrade for 25 min.
16. Even when the baking time is over, leave the cookies in the oven till the temperature comes down. This will impart them an orange and light brown colour.
17. Once cooled, remove from the tray and consume. Store the remaining in an airtight container.
