James, I really appreciate the effort you go through (and money) to provide an honest appraisal of your experiences. Not many people are prepared to talk about smoke quality and how to get it. I have had my KJ classic 3 for over a year, and I can tell you that all the tips and tricks from the pizza oven and solo stove to the offset and KJ jr have made an impact on the quality of protein that I am able to produce. You can’t beat the all in utility of the Kj for being able to tackle and do a good job of things like burgers, steak, chicken, pizza or smoked brisket and ribs etc…. It does better at all those things than any other single tool so it’s kind of one grill to rule them all 😂 The offset while it comes with more effort … that effort is rewarding / enjoyable and the result is immediately obvious why you bothered to sign up for the extra work

Love this video, James! I’ve been waiting for this one. It makes sense to ultimately go for the Gen 2 Huron for the added space (which looks like your backyard has plenty of room for… with 4 cookers! Lol). If I had the space I would have done the same but I’m glad I chose the Carlisle, fits the footprint over here. Looking forward to see more cooks, keep em’ coming!

Those Hurons are beautiful. I had one built from a 120 gal propane tank. Went with a local welder. Did a lot of checking Welders work but it was worth it. Have had it for 3 years now. All doors work well and I have very little smoke gaps. I’ve 2k $ in her. Something to look at.

I still think a reverse flow would answer most of the concerns you have and give you back more of the space you have for cooking. Maybe there aren’t any good ones near you. There aren’t any good ones near me.

I contacted Smoke North last year, as I'm shopping around for a better offset smoker, and they wouldn't cut a "cowboy" style door in the Firebox like Workhorse Pitts. And thanks for your showing of the Gen 2 from Smoke North that they still won't do it. Looking more and more like I'm going the Workhorse Pitts route. These Canadian companies I find are charging too much money using the Canadian Dollar to US Exchange cost and shipping here to justify their prices. Keep up the great work!

I had a few quotes on custom and they were more $$$. I think 950lbs of domestic & stainless steel are going to end up at these price points regardless of the USD dollar buying power over our Canadian currency. I had someone tell me you don’t pay tax on importing a Canadian pit like you pay for the workhorse. You might want to factor that and lead times into all the options you’re looking at. The new grill grate does what I want so I’d rather not have the seasoning issues with a cowboy cut out personally but if that’s what you want they are a great option

Capo in Toronto for everything I would want is just over $6k, the Prices from Smoke North aren't that far off, I was just disappointed that they wouldn't cut the Firebox like I wanted. I live in Brampton Ontario, so Smoke North was an option like Capo in Toronto, but it's looking like it will be a major toss-up between Workhorse Pitts and Capo Cooktops! Again, thanks for the input, and I enjoy all of your work!

WoW James, what a great review of offset smokers. I also saw the Oklahoma Joe on special at Rona. However this cheap smoker will not last for long if you leave it outside. I believe when it comes to those smokers, you better pay for something that worth it.

Ugh you just upended my decision for what premium offset I wanted 😫 lol. But keep em coming. Really enjoying the well rounded content and comparisons. I have a longhorn with similar mods. It's comforting to know the amount of work and babysitting will decrease once I finish saving up for a larger more premium offset. Also good to know the fuel efficiency is better. I was concerned about how much more wood I'd need after seeing how much the longhorn burns through.

I was shocked at the difference or lack thereof with the wood consumption. I gather the thin walled metal is losing so much more heat it burns more. That along with the prep work on the wood making it smaller perhaps consumes it faster than the density of a larger split

Question about Huron vs Carlisle. But first, I greatly enjoy and appreciate your videos. In fact, they were instrumental in my decision to purchase a Smoke North, even though I had initially believed that the Franklin pit was the way to go. My difficulty is deciding between the Huron and Carlisle, especially since I cannot foresee needing more capacity than the Carlisle offers. Rightly or wrongly, I have concluded that there is no downside (other than price, both to purchase and for a little extra wood consumption) to the Huron, so that I what I have decided to order. If there were a specific upside, besides capacity, it would be a no-brainer for me to prefer the Huron. In that regard, at 20:29 you comment that the Huron has a 28" firebox, as compared to the Carlisle's 24". Is that accurate -- from what I can see and infer, both have identical fireboxes. Either way, I am going with the Huron (unless you point out some downside I am not considering. Thanks again for your videos.

it was changed to 24" as some shipping routes don't have trucks that could fit the 28" box on the Huron which ruled out trucks with flat loaders. I don't think it's a big deal even though mine is now a relic of early production. I was just invited to test their pre-production reverse flow offset which i have not tried yet but thats even more compact... its nearly huron space in a carlisle footprint

Well that is an amazing video on offsets and what is different on the new Carlisle. Thanks for showing us your back yard too as I looking at how to redesign my backyard since it burn during the Marshall fire a year ago. I am stuck with a 4 foot fence and all my tall bushes like yours are gone that could of hide a Carlisle. Please share your thoughts on how much room it takes to use and store a Carlisle size grill so I can figure out if I can have a Carlisle.

Thanks for these videos, James. Love your content. I’ve been interested in an offset ever since my friend gave me some brisket from his Oklahoma Joe. Couldn’t get over the flavor upgrade even from my Kamado Joe. The thing is, I’m not a huge heavy meat eater like brisket and ribs which seems so common for these off sets (after all they do measure their cooking size by the number of briskets it can hold, lol). My question is can I make chicken, flank steak, pork loin, fish, etc. on a nice offset or is that not what they are designed for? Thanks again for all of your content

Be careful cutting logs with a miter saw. I've done it quite a few times but I've had the saw catch and yank the wood out of my hand. It was pretty sketchy. I was looking for other solutions and I saw several other guys saying don't cut your splits in a miter saw.

Seriously? LOL You are in a backyard BBQ paradise. The new 85 gallon size on the Carlisle ought to make fire management easier compared to the smaller Gen I. Considering the improved features added to their already existing quality, that seems to be an ideal backyard offset smoker. And if the wife wants a second James, there is Huron. LOL BTW, in the audiophile world there is the expression WAF, Wife Acceptance Factor which I have never seen used in the BBQ world. The backyard is a man's kingdom . 😁

This is exactly why I don't like backyard offsets. For a basic "good" backyard offset the size of the Carlisle, you're looking at probably $3500+ before shipping. For about $5500-6000 before shipping you can get one of the most tricked out large offset an outfit like LoneStarGrillz makes with off-road pneumatic tires or a trailer to boot - especially if you go with a vertical cabinet style offset that gives loads of space for a smaller footprint. I don't think backyard sized offsets make any sort of financial sense when you can get something massive in comparison for comparatively little additional cost when you're up to the "built well" price tier.

I am not taking away any Kj content, but adding more things. Thursday was KJ Santa Maria setup and next week is live fire pork belly burnt ends. I have an amazing spring content calendar lined up for Kamados I don’t expect or want you to copy me with these other pursuits but they have accelerated my learning on how to get more out of the KJ. I came up with the double indirect after a side to side with my offset which helped expose the areas I need to work on get better results There will be more Kj videos this year than there are weeks so don’t worry they aren’t going away

Depends what you want to do. The offset and pellet will be similar in terms of the foods you can cook so you’re not opening up something you can’t do between them… but the flavour difference will blow you away at the cost of going from next to no involvement to 100% involvement The Kj can be ran with a fan if you want the set it and forget it experience you’re used to and or run manually equally well and it opens up things your pellet won’t do as well like high heat seared steaks, smash burgers, rotisserie wings or pizza etc. Get the kj if you want a grill, get the offset if you want next level low and slow results … and i mean next level

@@SmokingDadBBQ I see (at 9:08 ) you're using Ash wood. is this for a full smoke? or to build your coal bed up? Ash burns nicely but I rarely hear of people using it to flavour their bbq meats. ps. what is your favourite wood to smoke with? I've heard that olivewood is great :)

@@iskato914six this was just for fire management practice / breaking in. I use oak for cooking Birch I use for heating it up quickly on a cold start and then switch to cooking wood

I was already in contact with Smoke North the shipping cost by air was 2500 dollars. Then I still have to pay import duties of 21% on the entire total amount

You can make great food from a trash can with the right technique so it’s not that price guarantees better results. Does it make it easier / more repeatable for more people and help reduce variables like external variables/weather for sure

Does it take longer for the Huron to come up to temp? Do you think it would feel worth firing up the Huron if you were just making a couple of racks of ribs for your family?

I use birch wood to do a fast heat soak. I am sure it takes longer but I need to time it. My normal approach is kiln dried wood (birch) and light with the torch and let it fly. Ideally 350-400 which is getting the entire pit heat soaked and switch over to cooking wood as it’s coming down back into target temps Normally 30min from 0-cooking

@@calebgagnier equipment is a factor but it’s too easy to start saying you “need” this or “have to spend this much” in order to get this result. The Tour de France hasn’t been won by a rider on a mountain bike or a tandem bike lol… but one of those riders could kick my but if I had the most expensive race bike. Just like Ms Totsie or Franklin could blow away most backyard grillers on a pit that costs nothing based on their skill You’re giving yourself every advantage equipment can which reduces the skill required for a more repeatable and enjoyable experience but I wouldn’t go so far to say it’s impossible to create tasty bbq on a less expensive pit

A few words of wisdom: You WILL get burned out of smoked meat... I know I have, and I am a lifelong Texan. I used to love it. I mastered the art of smoking meat, and it's an accomplishment to be proud of, but at some point, you will get burned out... I actually sold my smoker last month, because it just lost it's appeal.... I still cook out weekly, but will not be smoking any more.

Larger cook chamber will be the deciding factor because of impact on air flow and convection properties. The tests are going to be anticlimactic…we all know where this is going to land.

Regardless, I’ll be watching! Big fan of your channel and content. Your point about the larger firebox allowing you to create more separation between the fire and the cook chamber is huge. It would be nice to see a side by side comparison illustrating that. Also I’m really curious to know how hot the flat top gets.

Smoking Dad BBQ okay let's get this out of the way. I've really been trying to enjoy the little bit of content I've watched from you so far. But dude you are seriously spoiled and have held lower more budget friendly smokers [Oklahoma Joe's] and I have a Chargriller offset that cost me around the same cost as the Oklahoma Joe's and I have used that thing, had a blast doing it, 5 years still strong as when I first purchased it, and I guarantee that I could produce exactly what you can off of your premiums. P.S. and that's before any modifications at all. So count your blessings bcuz yours are others' luxuries who just love to cook great BBQ at the same level as you from just working with what they have...here's some very realistic content idea, (I'll sub if I saw you put it out😉), keep the Oklahoma Joe's for 365 days straight from a day of donating all 3 of your other smokers. And put yourself thru what tons of other people go thru.

Hi Drew, I am not a BBQ store selling these products or a brand ambassador getting these for free. For a short period of having all 4 I made some content that compares the difference, have shared how to get more out of budget friendly options etc. I've cooked on them side to side on the same day, same food and am able to tell whats actually different vs. the hypothetical dinner argument you see in movies about someone arguing their minivan is faster than a Mustang. When you've done the same and still believe the physics of airflow, volume of wood consumed etc. tastes identical I will be sure to come check out that video, comment on it and also not sub based on my uniformed assumptions about you 😊 In all seriousness the point I have tried to stress in every video I have made about any grill that I have shown from the Akorn Kamado which costs 1/7th of the money as a Kamado Joe, to the OKJ vs. premium backyard offsets its not about needing to spend a fortune to enjoy this hobby. If that hasn't come through I will try and be more clear. The fuel consumption and fire management differences are scheduled to come out soon

@Smoking Dad BBQ Ay. Great man thank you. This is real constructive and somewhat more helpful. A video I would like to see something on is the V Grate method vs Charcoal Basket method. That I think is easily over thought and people will go throwing money away and make things a lot more difficult for themselves just to be trying to make things more easier and convenient. I did it in this video - kzitem.info/news/bejne/pJVrqa5pfXiilWk I feel like charcoal and larger splits takes away some smoke quality, encourages reverse draw given how I needed to prop the firebox door etc. all that wasn’t necessary even stock with properly sized splits
