You always cook beautiful dishes Sir Hiro, your Kaldereta looks authentic. Some people put cheese, pickles, or evaporated milk. My mother put cheese and pickles on ours, it can also be pork or chicken. I see that you watched Erwan Heusaff hahahahaha, whether Calderata or Kaldereta is both fine as C is used on old spelling as influence of Spanish occupation. Hoping that more people will come and discover your channel because your vlogs are relaxing.

Caldereta is a word from Spanish word "caldera" which means cauldron. The "kaldereta" word is used to make sound more Filipino. Originally, kaldereta is made out of goat meat. The dish is similar to meat stews from the Iberian Peninsula and was brought to the Philippines by the Spaniards.

thank you for teaching us okonomiyaki! waiting for takoyaki tutorial soon! as for the caldereta dish some people put saba(banana) there too. caldereta is fancy word version..kaldereta is a filipino word version. but i think nowadays they differ between europeanized version (caldereta) vs filipino version (localized)..probably european caldereta style has a more cleaner taste..filipino style has a more "intense" flavour. actually there are different versions..the soupy (watery)..the oily..and thick coat. some have tiny veggie cuts..less veggies..some have more veggies..big cuts. some have tiny meat cuts. the sizes can vary. usually but personally i think it is best paired with a softdrink or just plain cold water. you can try "nilagang baka" next time..it tastes like savoury water beef stew. nilaga means stewed or simmered i think. baka (read as bah-kah) in tagalog means "cow". but i've seen people use different kinds of meats on that thing the round beef (w bone) and normal beef. some pressure cook it (the round beef).

Your Kaldereta looks so yummy! It seems that you cooked the beef just right, so tender. My father cooked Kaldereta using goat meat when I passed the board exams. It was a special dish since goat meat can be quite expensive and it has a different preparation. The Liver Spread made the sauce more savoury together with the Knorr Beef Cube. In the original recipe, it didn't have the Liver Spread. That was added later on. 'Kaldereta' would be the Filipino spelling of the dish because there's no 'C' in the Philippine alphabet.

Great video Hiro-san! You can use Kaldereta, or Caldereta interchangeably. Caldereta is closer to the spanish word origin “caldera” or pot in which the dish is traditionally cooked. Our family’s version has olives, pickle relish and is usually spicy, with about 2 sliced red chillies thrown in after the initial boil. This is mellowed out by adding cream and small cubes of cheese after the meat becomes tender after simmering .we use queso de bola if we still have some left over but cheddar works too. Is goat/ lamb meat as available as beef in Japan?I really admire the cleanliness of your meal preparation and this is something i try very hard to practice myself when i’m cooking.

Its just dat in Filipino alphabet there should be no use of C except for borrowed foreign words & proper nouns, but since our 2nd language is English which uses C... the use of the letter doesnt matter around. I guess its just "Kaldereta" for Filipino & "Caldereta" for English.
