This was a great episode! To be clear, I’ve never been a fan of competition cooking because that it never what it has been to me (though my food should always be best). But it was very insightful and makes me respect Iron Chef a bit more. I do very much more enjoy learning about cultures through food. From a very young age I loved learning about other cultures and getting to try cuisine and cook that cuisine was always, and is always, a great adventure.

As we said before on the channel...to me, the story of food is the story of people. Track down the origins of the dish and you can find how and when people migrated to certain regions, what ingredients they brought with them, and how different cultures influenced each other. Such an interesting rabbit hole to explore no matter where you might be.

@@OTRontheroad agreed! I do think that due to multiculturalism, globalism, and mass media, this will be harder to track in future generations. I think that’s why actually documenting ingredients and methods now is so important. Not in any stupid “it can’t be authentic if …” sort of argument, but because ingredients and methods are an interesting look into everyday lives of people in the past.

yea, right around mid 2000's was when i started watching Top Chef and i was addicted to the show. i had been watching OG Iron Chef since i was a kid, i loved Chen and Sakai

Loved this video. Very different format from what I remember of the original IC where one secret ingredient was used over 4 courses. I watched the original Japanese Iron Chef back in San Francisco in the 1990s on a foreign language TV station. Thankfully it had English subtitles. It was a big deal when local chef Ron Siegel became the first American to win on Iron Chef in 1998. Whenever it was announced he would serve his Battle Lobster menu at his restaurant it was so difficult to get reservations.

I had been living in the united States when the food network channel just started in1976 as far as the Iron shelf show that was much later on in the 80s the I ron chefs original started in Japan The food network started the I ron shelf show after that.

Plessha! Plessha! Plessha! Too much plesha this side. That's why I was never a fan of Iron Chef after watching it several times. Interesting, but I'll take the street food from Aunties and OGs over those dishes. But kudos for being on the show.

Of course...and it's not really a great way to represent a dish or a cuisine, because everything we cooked would have been better represented with hours for flavor development. But it's a really interesting challenge and a fun test of ability

I've had a few conversations with them about going back as a competitor- still in the early stages and I have no idea if it'll happen- it's a bit tough as I don't have a restaurant here so there's nowhere for them to film in my own kitchen, but I'm sure we'll make it work one day. My actual area of specialty is Central Chinese food. I'd love to build a team and give that a go.
