Some people are willing to eat mushrooms that are sometimes grown either on top manure but some are grown green houses which are different but yet wont give this a chance that grows naturally on a corn stalk. This is the most healthy, vegetarian corn fungus u will eat. When the corn fungus is dry and powdery it's no longer good . We grow about an acre and half of corn each year and my kids love the homemade tortilla with cheese and squash blossoms and corn fungus.

So for anybody out there that's watching this and asking the question why would you ever want to eat a fungus growing on corn there's actually a really interesting reason behind it. So this is probably one of the only fungus that exists that infects a crop that makes the crop more nutritious. Yes you read that right corn smut is way more healthy than regular corn. Now the issue is, it's not going to allow the plant to produce as much of the Corn as it normally would, but what infected ears exist on the plant are actually modified at a genetic level basically. Typically corn is looked at as an almost complete protein. It's missing one protein type to make it a self sustainable food where you can eat it and basically nothing else and survive. For some reason the fungus that infects this type of corn give the corn that final protein. This makes eating corn smut the equivalent of eating protein carbs and fat all at once. This is a very broken down and generalised explanation, there's a lot more to it, but if you couldn't for some reason find a good sustainable source of meat you can eat corn smut with other vegetables and you would literally be able to survive at relatively the same level as if you were eating pure meat proteins. Also from what I'm understanding about the flavor it's not that bad. There's actually a savoriness to it and it still tastes somewhat like corn but a little more yeasty if that makes any sense. if you've never seen it before and never tried it I would suggest trying to get fresh corn smut right off the plant but if you're nowhere near Central America you can go and buy it at the store.

I live in Mexico City. Yes, it is vary popular in quesadillas. I find it to be revolting. It tastes exactly how you'd expect rotten moldy corn to taste. I keep hearing it compared to mushrooms. I love all types of mushrooms. This slop does NOT taste like mushrooms!

Nice, I just saw your video because I wanted to share my daughter something about our great cuitlacoche in Mexico, she's from the northern region in Mexico and they are not too much into it, I'm from the capital so yes I love it! If you want to go to the next level add epazote and then it will be really Mexican. Mexican natives called it huitlacoche or cuitlacothe and it means the God's excrement and yes it is a delicacy that any people is Mexico is expecting for huitlacoche's season
