for 7 alfajores
50 g butter or unsalted butter
60 gr sugar
Lemon zest
1 yolk
120 gr 0000 or all-purpose flour
1/2 tsp baking powder
45 gr sugar
15 g cornstarch (maizena)
1 yolk
50 ml lemon juice
150 ml milk
150 gr white chocolate
75 ml heavy cream or whipping cream (minimum 35% fat)
*In the video I said that you can put them in a double boiler if you don't have a microwave but I was confused (I was thinking about the chocolate alone). What you have to do if you don't have a microwave is to heat only the cream until it comes to a boil, then turn off the heat and pour it over the chocolate (ideally it should be cut as small as possible), stir until the chocolate dissolves and leave it in the refrigerator.
