It's been around for longer than you might think, but gunpowder is a massive ingredient in explaining what makes certain Total War games pop more than others. Whether we're looking at late game Medieval 2, Empire Total War, Shogun 2 Fall of the Samurai or even Total War Warhammer 3, gunpowder changes up the battlefield and makes it interesting in a way non-gunpowder battlefields simple cannot be, and the reasons for this is discussed in this video.
I believe gunpowder, especially when used in a transitionary time period setting, brings a sense of dynamism to the battlefields - and even the campaign maps in certain circumstances - which Total War and Creative Assembly need to capitalize on even more than what they currently do, since there is so much potential in partially gunpowder based Total War games.
