This is the hidden gem!! I worked at a Mexican restaurant a while back, & they would put orange juice, Modelo, fresh oranges, lime & cilantro in the meat and it was THE BOMB!! 🔥🔥 It had the best flavor ever!!

A quicker way to prep fresh garlic: 1- separate cloves and loosely chop off the root end of the individual cloves (or you can chop off the root side of the intact garlic head all at once, but only if you’re feeling badass and have a sharp enough knife). 2- take any metal can (preferably one you’re already using for the dish, like beans or tomatoes or something) and crush the cloves of garlic with the can. Just enough to hear a good crunch, you should only have to press down on the can once or twice (like when you’re smashing tostones), otherwise you’re going to mash your garlic with the skin. This step should take under a minute and is a great way to relieve stress. 3- once you’re done crushing your garlic, the skin should practically fall off, minimal peeling required. From there you can cook it, or chop it up further as needed. Remember to rinse off the bottom of the can before recycling, or returning the can to the cabinet/fridge. You can also do this with Ceramic/metal mugs, metal measuring cups, a big ass pickle jar (be mindful of how much pressure you’re putting when using glass jars/cups plz). The grip of cups sucks compared to a metal cans but still works if you have nothing else. You can also use the side of a big knife and your palm but I personally try to leave that to the professionals. -Sincerely an 🇮🇹🇪🇨🇺🇸 who loves 🧄

I love that you have your baby peeling! This looks amazing and I’m trying it. Did you just chop the tri tip or buy it at a Carnicera already chopped? I’m honestly not shocked with the addition of juice because I’ve seen people use sodas, all kinds of things.

To save time with the garlic portion, cut off root portion of garlic. Toast the garlic in oven until fragrant. It should be easy to squish between your fingers. Then squeeze garlic from its peeling. Oozes out of peel like butter.

I've been marinating like this for many years now. I even use the pink tempika juice to marinate pork as well. A little Hawaiian Punch and tempika On the ribs overnight. Then I will dry them off and marinade them in Italian dressing for a couple hours. I will based with Italian dressing for half the cook. Be careful the oil in the Italian dressing we'll want to catch fire. Only put charcoal on half the grill.Then based with water down barbecue sauce. The water will evaporate in the barbecue sauce will start to get sticky.
