I’ve been reading the book Kitchen Confidential by Anthony Bourdain. While most of it is filled with some amazing tales of debauchery and downright criminal activity within the culinary universe, he does offer a lot of actionable cooking advice throughout.
In one chapter he references Jacque Pepin’s La Technique for learning essential cooking skills and most importantly how to properly use a chef’s knife.
That particular skill is one that I have always wanted to learn and improve my current ability.
