For the people asking. The sodium citrate is a emulsifier so it keeps everything together allowing cheese to melt without oils seperating... sodium hexametaphosphate stabilizes dairy products... the gelatin acts in this like rennet does in the actual cheese he added, it coagulates and thickens the cheese product he's making...

you can also just buy the emulsifying salts and mix them into the cheese. like if u make a grilled cheese with a slice of cheddar and a slice of some other cheese, you cann just put some of the salt between the slices and they will melt way better. (if u only want to buy one I'd recommend sodium citrate) not as gooey as Joshuas Cheese in this video ofc since there is added milk and butter in his process. but for me its better than making slices of processed cheese beforehand. :)

There is a waaay easier method. For every two cups of shredded cheese add about two tablespoons of lemon juice to a teaspoon of baking soda and 80 ml of milk/water. Stir, heat and cheese, stir, let cool - American cheese.

@shiivainu9442 Rule of thumb is that, one, the cheese needs to be melted, and two, that it cooks in direct contact with heated fat; think grilled cheese made in butter, quesadillas fried in oil, a slice of Kraft sitting on a hamburger patty that's being charbroiled over fire. It's a composite ingredient that only has a few specific good use cases, but when properly applied, it can be an amazing amplifier for the recipe in question.

All of baking andcooking is literally just chemistry. Whenever I experiment with foods, I'm literally using chemistry and math to make them turn out a certain way and to taste a certain way. American cheese is just already made cheese with added whey (byproduct of cheese production added to alot of other cheeses), emulsifiers (in the form of fats, proteins, enzymes, and salts), and preservatives (acids, salts, and enzymes), and sometimes color derived from plants and animals. Chemistry is a huge part of baking and cooking. Want your cookies to be extra chewy? Add an emulsifier in the form of an egg yolk. Want your frosting to be more stable? Add stabilizers such as gelatin or agar agar. Want to make your homemade strawberry jam or spaghetti sauce have a longer shelf life? Add preserving agents in the form of acids like citric acid. Want to adjust the pH of your spaghetti sauce because it's too acidic from tomatoes? Add a base in the form of baking soda. Cooking and baking is all about the chemistry baby 😊

you should look up how they make other cheeses its always complicated often involves the bacteria of a cows' stomach. this is probably the simplest cheese since you start with whatever cheese scraps you have already and just melt it all in a pot and pour it into a pan. other cheeses need to be boiled and cut and washed and kneaded and strained and aged for a month or so

Emulsifying salts are powerful things. Also: fairly easy to make in the kitchen. Sodium Citrate can be made by mixing any Citrus juice with a little bit of Sodium Bicarbonate (Baking Soda). Works great for Queso Blanco.

This is what we know as a "stretched food", a lot of these things were prompted by people in poverty wanting to stretch their food out. You couldn't get much cheddar cheese, so you melt it down with gelatine, milk, and emulsifying ingredients that you have around your home (now sold packaged in their isolated chemical form like Josh uses here) And make more "cheese" with the small amount of cheese. Now you have a cheeselike substitute that was flavored with real cheese.

Fun fact: This is how American cheese was made prior to the 90's when they started substituting a lot off the cheddar off-cuts with whey protein since it's cheaper. This stuff tastes way better and can actually be sold as real cheese. (as opposed to "pasteurized cheese product")

My problem with it is that it's only useful in burgers and a grilled cheese sandwich. When I make Macoroni I prefer to make a bechamel sauce and use a combination of gruyere and extra mature cheddar. Plus for toasted sandwiches (cheese and ham/cheese and tomato) you can get sliced gouda which tastes better.

I just got myself some of the cheapest processed cheese (with way more sodium citrate that necessary already inside) melted it in some cream and added cheddar and it pretty much worked. (I should have added twice as little cream)

If you're using the "American" cheese the same day or within 3 days, you can skip the hexametaphosphate and make sure you chill the mixture after pouring. Any storage past three days, you'll need the hexametaphosphate.
