Chocolate Chiffon Cake made of Rice Flour
Pan: 6-Inch Pan. Preferably not non-stick.
Ingredients:
4 Large Egg Yolks
20g Powdered Sugar
15g Cocoa Powder
100g Milk
70g Rice Flour
Meringue:
4 Large Egg Whites
60g Powdered Sugar
Instructions:
Preheat the oven for 330F/170C.
*With fan assited oven for 305F/155C.
1. Make the meringue. In a clean and oil-free bowl, add egg whites. Use an electric mixer. Beat on high speed, once egg whites become foamy, add 1/3 of the sugar and beat on high speed for 1 minute. Then, add 2nd batch of sugar beat on medium for 1 minute. Lastly add the remaining sugar and beat on low speed for 1 to 2 minutes or until stiff peaks achieved.
2. In a separate bowl, add egg yolk slightly beat, add sugar then beat in 30 seconds, add cocoa powder beat for abother 30 seconds, add milk beat until incorporated then sift in flour. On low speed, beat ingredients until lightly combined.
3. Add 1/3 of the meringue into the egg yolk mixture then use spatula to fold in ingredients until smooth, andd another 1/3 and fold in again, and add the last 1/3 meringue fold in until completely incorporated and texture is smooth.
4. Pour batter into thr pan. Tap the pan gently to release some air bubbles.
5. Bake for 30-35minutes.
6. Let it cool upside down for at least 20 minutes.
