You can just store malai and than just mix it with chilled water and blend it for few minutes. Butter will seperate. Wash this butter with chilled water few times and butter will be ready. Cook that butter until solids seperate and ghee is ready.😅

Make first dahi of malai. As ghee or butter is Desi makkhan or Desi ghee only when curd is made. Direct ghee or butter from malai is not healthy.

Bro commenting as a dairy Technologist the reason is not less fat but the reason is the stabilizer used in the UHT cream. Therefore it will not churn.

Bro, amul fresh cream is not for the purpose of whipping or butter making, for that amul doea make dairy whipping cream (while hard to find at stores can easily order it online)

@@random_thoughts_with_Betty for my location it's always available on swiggy instamart and bbnow, when I can't find it, I take a pack of fresh cream and freeze it upside down, so the higher fat content product settles down and freezes and I can separate low fat part.

The so called non cultured butter gained prominence post industrialization of food, because it was less effort, less labor, and faster to market product. That is how also, till sometime back butter had a very bad reputation, because scientists were testing this commercial butter made from milk during homogenization and not the real one. Now coming back to him, there was no need to say “just like Europe “. It shows how he actually believes that, they are superior because they found the healthy version and now by following their footsteps, we can make too. Urban elites are like Saif Ali khan, who think India didn’t exist before the British came along. Worse, they also buy into the propaganda of how uncultured , and Barbarian Indians were, until the British came and taught us. There is a reason urban elites love to diss anything Indian and blindly follow anything from “colonial powers”. But when the same “colonial powers” give a stamp of validation, they lap it up. Examples, yoga, ghee, “superfood” Moringa, golden milk latte(haldi doodh), anti-inflammatory shots( adark haldi ki kadaa), probiotic yogurt risotto (curd rice)…the list goes on. So yes, urban elites are so obsessed with “colonial powers “ that they fail to see reason, logic or evidence

Hey bro, you can cool amul cream and then cut the whole box, take the thick upper layer to make butter and discard the rest. Also you can use it to make whipping cream.

The difference is amul fresh is made from RAW cow milk and mummy wali is made from Boiled buffalo milk which is more in fat content, AND boiling helps separate fat from the milk. If u want good butter, always use mummy wali malai.

Correct me if I am wrong but North Indians make butter from churning cream/malai. In Maharashtra, we always add dahi to the malai, let it set ( like dahi) and then churn the butter. It’s more healthy. This butter is then made into ghee

Amul cream is homogenised which makes fat protein complex less than 2nm. It is impossible to break this complex with wisker or blender.

Please don't make it so hard.. Just take all the cream(malai) and fill half jar with malai and a little bit of cold water and blend it ,then pour the mixture in a bowl...repeat the process with the leftover malai. When it's all over... Again Add some cold water or ice in the bowl.Stir the mixture left and right. Within 2 min the butter will come up. Take out the butter and wash it again with cold water. Use it as butter or can be converted to pure ghee also. During the process add some curd in malai. This will save your time.
