One small detail: Most hawkers add a pinch of baking soda to the batter just before frying and beat it, which makes the batter froth. When vadas are fried with such batter, it forms a thicker but foamy cover, and the vada tastes a little milder. If we don't add the baking soda, the vada gets a thinner cover, but it has more intense taste. Both versions are popular in different regions.

I've tried cooking Indian food, the recipes usually requires alot of ingredients and spices and makes it difficult to get it right. For me its easier just go to an Indain restaurants. The food is also waaay more authentic tasting:)

U know what I like about westerns cooks is there precision, attention to detail n exact techniques that they employ that is so much easier for a viewer to grasp while watching n learning. As an Indian myself n loving to cook, even I had never realised these methods that u showed to thicken the chutney, to make the pavs n the heavenly dry garlic chutney. It seems as Indians we don't really put that much effort into exactness n precision, we reply more on our feelings n tasting and thus fail to replicate something exactly. As Asians we r blessed with certain skills that help us sail.

What you just said about "western cooks" only apply to the best like this guy. Most western cooks are absolutely shitty. Btw, Vada Pav is a street dish. Ofcourse you won't see it made like a 5-star chef. That's like eating schezwan noodles on the street and saying people don't put enough effort. Eat it at right places, this guy learned it from Indians so obviously someone did put effort into "exactness and precision".

I used to live in Bay Area and miss these dishes. I now live in an area where most of these ingredients aren’t available but would like to try a version.The spices are amazing in Indian cuisine. These recipes are amazing.

I'm 20 yrs old and like every other mumbai youngster I'm a hugeee vada pav lover. I've made vada pav at home around 25-30 times. If u don't mind I'll give u some tips... 1) after ginger garlic paste u also need to add finely chopped green chillies 2) adding salt in potatoes stuffing is important 3) once the potatoes are done let it cool down and don't forget to add some lemon juice as it adds alot of flavour to it. And lastly if u have coriander available u can add it or skip it Remaining everything was correct. And I appreciate how you also made the pav too

batata is Gujarati for potato, so it will only be used by those speakers not Hindi or other languages. Mostly I hear people just call it 'vada' with out a reference to potatoes when eaten without the bread.

@@blaser80 batata is a Marathi word and the gujratis pronounce it differently.simply calling it vada creates a whole new level of ambiguity cause there are numerous vadas on the streets.so contextually calling it *batata vada* is appropriate.

Loved the Authentic pav .. will try the pav recipe for sure.. really hard to find authentic pav outside India (you can use hamburger bun instead). Crispy besan bits are called Chura when it is served with vadapav. Awesome work!

I like to really work the tamarind with my hand until the water gets thick with the pulp. That way you get the most out of it when you strain. I was silently cringing when I saw how much pulp you didn’t get to use! But looks delicious 😋

The "Mumbai bun" as she called it, is what we call pav (pronounced as paouv with ignoring most of the v). But tbh it's basically a soft roll.

I was a bit apprehensive first about how authentic the dish would come out but WOW was I glad and amazed after seeing the final result. It turned out to be as authentic as it could get to a Mumbai Vada pao. From the bread to the fritter everything looked perfect. its amazing what one can achieve if he is passionate enough. Just a pro tip , I would like to share that i had learnt from my mom. While making the dry garlic chutney, try adding some fried chickpea flour shavings(sev) which you can easily make while making the vadas. Or better, they even come off as a side product of frying the vadas in the oil. Adding them gives amazing texture and body to the chutney/masala

Recipe is pretty accurate. Pav looks to die for. You may try adding just a tsp of fennel seeds and whole coriander each in tamarind chutney. It'll definitely up the game, I promise.

For the vada (potato fritter) instead of ginger garlic paste use mashed green chillies and whole garlic (with skin). The garlic skin gives the added authentic flavour.

One of THE best vada pav recipies I have ever seen. I am drooling. Your Tamarind and Garlic chutneys were PERFECT. Better than many Indians make it (Probably because they have been doing this for years and found shortcuts). Very elaborate and nice chutneys. Paav and Vada looked amazing. I felt like coming to New York right away. We don't get good vada pav in Michigan. For me mint chutney is optional and adding Pav to it is something new I learned from you. I am 100% sure your Vada pav tasted way better than Priya's as everything was fresh and made with dedication. Hope to try it someday. Lots of love!

Yummy! Love it! The Vada Pav has saved me from fainting from hunger many a times after moving to Mumbai where it is more the street food favourite than any other part of the country. This was a delight to watch being done from scratch. Btw and just as an FYI: a vada (aka Vadai) is a savoury doughnut which is called a wada in Mumbai and the northern states. What goes into the pav, that's called a wada is called a potato bonda in Southern India. Just some extra info. It may be a nice thing for you to explore making idlis, vadais and onion pakoras with coconut chutney and sambar. Just a thought.

OK Your Tamarind chutney has one very important missing ingredient "Ajwain" or Bishop Seeds, if you dont have that you can also use "Thyme", quite surprisingly both have same taste.

add some red chilli powder for color n baking soda to make chickpea batter light. If you flatten patty instead of a round ball, it is easy to stuff between the bread n eat too

Coming from Mumbai, I can really say that you nailed the 3 chutneys. Also the pav is never really cut fully, the vada must fit into the gaping pav. It's exactly what I used to eat at a local stall near my place, including the boondi that you decided to incorporate. Cheers! Along with the vada pav is its brother bhaji pav (not to be confused with paav bhaaji). It is a mixture of fritters of potato, onions and chilli in paav along with the chutneys.

You don't cut the PAV in 2 pieces. Keeping it locked(or opening it and keeping it in L Shape if that makes sense) will hold the chutney and vada together. You can even add more stuff to it and it will still hold it all.

Oh boy the groundnut chutney you made is my favourite. I add a bit of curd on it and mix it well and have it with hot chapatis. Heavenly.

Normally you add wet dates also to the tamrind chutney..Also the authentic version of the garlic chutney has the fried chickpea batter that you added in the wada pan as well...overall good that you did not try to make it an American dish but did it like the way we grew up eating it in Mumbai
