Pro tip: finish the pasta IN the sauce, within the pan. That way, they soak up the sauce and its unbelievable creamy. That way the "smooth" pasta will also take the sauce and the sauce won't split like yours did a little ;D add some pasta water to retain the non-split consistency. Greeting, I love your cooking show!!

The brazed Gorgonzola short ribs were amazing. I only had them once probably around 8-10 years ago. The only Olive Garden near me is 90 minutes away, so I don't go much (twice in 8-10 years). Last time I went was June 1st, 2018. I took my nieces to Nitro Circus at Autzen Stadium, the reason I know the exact date of my last trip to Olive Garden. I was crushed when I found that they were no longer on the menu as well. I too decided to recreate them at home. I did pretty damn good, and that was the reason I fell in love with short ribs, and also Gorgonzola as well. I have loved Bleu Cheese and Feta forever, but that was my first experience with Gorgonzola. Brazed short ribs are like pot roast times a million, but also more versatile than just that, but I tried to match theirs and braze them. So wonderful. Love the channel Guga. Keep making us hungry!

And I just wish I could get my fingers at that amazing cut from Uruguay. I will substitute the Australian stuff probably. Hey Guga. Your pasta dishes always look great. I am going to one of th a try soon. If you are ever looking for a video idea/suggestion I would love to see your take on spareribs temperatures. I know you did spareribs different temperatures and also different cooking times in your video's. But I don't believe I have seen spareribs at different temperatures compared in a single video. For example: I used to do 62C for 24h. But now I do 70C/20h. Much more tender, not a lot dryer. But maybe 60C is best? 75C? 80C? Where are some of the sweetspots for tenderness/juicyness. Again, I would love a comparrison and taste test from you (and Angel and MauMau ofc).

Wondering if you would consider a sous vide experiment with thick cut pork chops: 1 placed in a brine overnight; 1 seasoned, vacuum-sealed and refrigerated overnight; and the control seasoned just before being placed in the water bath. I just wonder how much of a difference a brine vs seasoned and sealed would be, or if they even show much of a difference at all compared to the control when using the sous vide method. Love all your videos! Keep up the amazing work, Guga!
