You are very selective and careful about your meat and your bread and then you are reckless about the cheese ...I mean using Philadelphia cheese a processed product that can only be called cheese because it is written on the packaging ! Make a real cheese sauce with real cheese like Roquefort , Stilton , Swiss gruyère , Comté, Parmesan etc...

@Leov dude! Caramelized onions are onions in their peak form. On numerous occasions I've done an entire 3 lb. bag of yellow onions. Stop reading this reply right now unless you wanna read a slightly lengthy recipe for them. I cut the ends off each one, then halve them, remove the drier darker outer layer (or two), and cut those halves into thin slices (like 1/8 or 3/16" thick...1/4" is a lil too thick for me). I like to break up all the slices so they aren't clumped cuz good caramelization relies on your fat being able to touch all surfaces of the onion. Then I melt an entire stick of butter in a skillet on medium high heat and also have another stick on standby so I can add more chunks throughout the process if the pan begins to dry out. Then I add the onions. Only add enough to fill the skillet halfway. It's a bitch to do finicky heat management in a crowded pan. While keeping it on medium-high heat, continuously stir the onions (as in nonstop) until they start to soften a little and get a little translucent. After that, give 'em a good stir and lower the heat to medium-low. Now, you might be babysitting them for 30-45 minutes. Make sure to always have at least enough butter in the pan so that it resembles a sauce. Otherwise, the sugar in the onions can burn quickly. I usually just have to stir it every 2-3 minutes but be diligent with making sure there's enough butter at all times. Also, deglaze the bottom of the pan whenever you stir it or add butter as this is your best defense against burning the onions plus the fond from the pan will infuse its flavor into the onions as they caramelize. Once they reach a rich, golden-brown color you're okay to call it a day if you wish. You may also like to go longer for a deeper and darker brown color which will produce a sweeter flavor and a smoother texture. You can literally get this stuff to where you can spread it on bread. It's all up to your preference and ability to further the caramelization without burning. As always, butter is your friend.

I was born and raised in South Jersey and lived in Philly for 13 years. I spent over 30 years in the area, and I’ve seen A LOT of “confused” non-local people making “cheesesteaks” in my time. This is not one of those times. This is very intriguing to me and I may try this for dinner this weekend. It looks like a nice, elevated dinner version of a cheesesteak. I approve of this 👍

Hi Guga, I've been watching both your channels for years and I really like your experimentalism with food. I was born and raised in Philadelphia and lived there for 26 years. I spent 4 of those years as a short order cook in various places and I've made 10s of 1000s of cheesesteaks. This is a definite departure from a traditional cheesesteak, but it looks awesome. I'm really happy to see you didn't make one of the cardinal mistakes of the fake cheesesteak. You didn't include fried peppers and onions. That's one of the major errors people make. It's also how I know that whoever designed the menu hasn't worked in a real cheesesteakery. You can order one with fried onions or with mushrooms or both, but bell peppers have no business on a genuine cheesesteak. Generally when people make this error, they're trying to copy the pickled cherry pepper relish which is served on the side at any reputable cheesesteak establishment and it falls absurdly short every time. Thanks for your content and keep cooking!

GUGA I want to see you dry-age 2 Picanha stuck together in the same bag to see if you can still get a good dry age result and at the same time reduce the loss when trimming because the 2 meat sides are stuck together and protecting the meet.
