Ive been adding a small splash of coffee to my cooking oil when making tempura and it adds a very lovely flavor. I think you should try it on your channel once youre able to safely add it to the oil! Best of luck Mark.

mercury is most prevalent in top-foodchain large predatory fish. These fish are small enough that it's probably not a worry

When you refer to a fish as stinky, what do you mean? I know a fish can become "fishy" if not prepared freshly. But I am not sure if you mean something else because you tend to use this word to describe freshwater fish specifically. Is it like an "earthy" flavour but in an unpleasant way? I don't typically consume freshwater fish so I am just curious (. ❛ ᴗ ❛.)
