The problem isn't how well cooked it is, it's that people are trying to eat wagyu like a regular steak. It's super rich so it's best served in small pieces accompanied by other things, you shouldn't be trying to eat a whole slab

So I had this debate with one of foreign professor once and I think it's just the preference and different of the world. The western want their meat to be well meaty. But people in the east do prefer more of a bouncy melty fat. But that was just our guess work

Def makes sense. I’m Korean American and personally prefer the meatier taste as I grew up in the states. Whenever I go back to South Korea, I’ve also noticed that they prefer heavily marbled meat as well as fatty cuts.

Yes! Thank you! I can't stand anything even close to rare. My Dad taught me a trick growing up, get a decent steak, beat the hell out of it with a meat tenderiser, add spices, beat them into the meat. Sear on either side then slow cook in the oven for 45 minutes in butter. Best damn steaks I've ever had. Not even remotely tough and delicious too

I dont like fatty meat, so well done is how i usually order EVERY steak tbh. I finally tried medium well for the first time with a normal file mignon, and while it def was easier to cut and eat and it tasted pretty good... i still prefer well done

Nononononono stop stop right now. If you dont like fatty meat dont get fatty cuts. Stick to strip loin or tenderloin etc. Lots of cuts out there you can enjoy that aren't fatty and can be cooked to tender not a block of wood. You'd probably LOVE skirt steak

@@richmondvand147 I never get it cooked THAT bad, I generally have an easy time cutting it. Well done doesn't mean a brick, that's just the sign of someone incompetent cooking it. My proof? I have certificates in culinary 💀 I've cooked steaks loads of times (the "proper" way), i just have my preference. Also what I mean by not liking fatty meat is that I don't like the part that actually HAS the extra fat on it. It makes me gag from the texture when there's too much fat.

This makes sense! the high fat content allows it to remain tender and juicy, and I would imagine also makes the meat "lighter" by rendering out some of the fat in the marbling .

Rendering is not just a factor of temperature but also time. Instead of going to well done, reverse sear or sous vide so that the fat is completely rendered, the collagen is broken down and the beef is perfectly tender but the myoglobin and beefy flavour is retained
