1. strain the milk
Put on 2 stoves heat up to 65 degrees
Take it from 3 stoves, let it wait 20 minutes

Ferment at 5.36 degrees
Let it ferment for 6.1.5 hours
7. Break the curd as much as a lentil grain
8. Leave the curd for 15 minutes to sink to the bottom
9. Take the curd in a straining bag and strain it
10. put a very tight pressure and throw out the whey for 1 night with a weight of 8 kilograms
11. Divide the cheese equally
Put 4 tablespoons of Rock salt in 12.1 liters of boiled and cooled water and mix, put the cheeses in an opaque bucket, put the salty water on top, let it sit like this for 1 night (it can wait in the fridge in hot weather, in the kitchen in cold weather)
13. For the second brine, add 2 glasses of water and 3 tablespoons of salt and add it to the same cheese again so that it stays for 1 more night.
14. Take the cheese out of the water, put it in a bowl, put a weight on it and drain the water every 5 hours and repeat this process for 3 days.
15.The cheese bucket, whose cheese will wait for 6 months, cannot pass light. Let's put cheese and brine on it, close it and it's ready to eat after 100 days, but the best flavor and aroma is obtained after 6 months.
