Homemade bread recipe or homemade bread loaf, easy recipe. Ingredients for 2 loaves of bread:
• Approximately 500 g bread flour with 11% protein
• 380 g skimmed milk - 0.1% fat, lukewarm
• 8 g of salt
• 20 g of fresh yeast or 7 gr dry yeast
Put the flour in a large bowl, add the salt and disperse.
For this recipe, we use warm, skimmed milk - that is, with 0.1% fat. I use milk with 0.1% fat because I don't want to add many calories. I bought it from Mega Image on the shelf with UHT products. It is their own brand. But LaDorna and Zuzu also have skimmed milk and you can definitely find it in many stores. If you can't find it, use what milk you have available, it will make a big difference in taste.
Dissolve the yeast in the warm milk. Always buy yeast as fresh as possible and as far from the expiration date as possible.
Pour the liquid over the flour, mix with a wooden spoon until the dough sticks, then turn it over and knead. The dough for the sandwich should not be sticky at all, so add as much flour as necessary so that it does not stick. I added 15 g of flour in total.
I specify that you may need much more flour if you decide to replace milk with water. If you want to prepare the dairy-free version, it would be best to reduce the amount of liquid to 330 g from the beginning and add an extra 25 g of oil.
Knead until the dough becomes very smooth and elastic. Grease the bowl with a little oil, nestle the dough in it and let it rest for about an hour.
Then we take it out on the table, and without kneading, we stretch it into a rectangle, divide it into two equal pieces, then roll each half into a stick.
Place in a baking tray lined with baking paper. We cover and let it rise for 40 minutes.
In the meantime, we can make a mixture of water and flour that will make the bread look much more brown. It is not mandatory, only if you want. In a bowl, add a not very full spoonful of flour (~20 g). Add water over the flour, enough to make the flour a paste (~30 g). Mix well with a whisk until there are no more lumps. Then gradually pour boiled water (~130 g) over this paste. When I say boiled water, it means that at that moment it must be boiled. If you wait even a minute longer, the starch in the flour stops cooking - it does not gelatinize.
After these 40 minutes, preheat the oven to 210 degrees Celsius, heat up and down without fan.
Then it is smeared with the prepared flour mixture, and raised with a blade. You can also brush with water, but the bread will be lighter at the end.
We cover again with the plastic film and let it rise until the oven heats up. For me, this takes at least 20 minutes.
Place in the oven for approximately 22 minutes or until the bread is well browned.
Let it cool, uncovered for at least an hour. You will get a soft and fluffy bread, much better than the one from the store!
