Two other things to consider that impact baking outcomes with vegan butter. 1) what the butter is made of, for example type of oil, type of nut etc. This impacts the moisture and fat content, even protein too, and can be helpful to talk about bc if someone doesn’t have that brand but knows what it is made out of, they could find something similar. 2) the other ingredients in the recipe, specifically the egg replacement. This will change the moisture, fat, and protein content of the recipe therefore requiring the type of butter replacement to change too.

Loved this taste test! I think it would have been cool if you had also done a frozen batch (as in, freeze the dough & then bake the next day). I don't think I ever see people do that in these type of taste tests -- but I've always wondered which butters are best for that, like a comparison of it. I haven't tried a lot of dough freezing myself :/ My go-to butters are the country crock sticks/tubs. Those are definitely the best price, as I've never paid over $3 for the sticks/tubs. They have 3 main kinds -- almond oil, avocado oil, & olive oil -- so testing out that brand alone is almost a whole new video... but I'd be super interested! The Califia and Forager butters I've not tried in baking (but I don't like either for toast or cooking with veggies on the stove). The Pure Blends plant butter I've used a few times in baking, and I've never liked it; it's good for spreading, though. I think Earth Balance is good overall, but when it's baked long, I think it gives a hint of burnt oil. I found that the only thing I liked the Miyokos for was baking lemon cookies. I find that all her butters have a subtle tang to them, which lends to anything that is acidic. I find that Flora spreads a lot, leading to very crisp, often over-baked cookies. Milkadamia is surprisingly good, both baking and for spreading on toast. The price is up there, though, so I've only bought it a few times. There's also the Simple Truth plant butter, which I didn't like when I tried using it for cookies.

This was great! I feel so bad for u that u had to taste-test so many! 😝😂 As I watched... I was wondering if u had chilled the dough but later u addressed that u did! Because chilling would definitely affect the shape of the cookie. 🍪 Did u check the sodium content of the butters u used? Some recipes say use unsalted butter. I read once that salted butters can have a big range on how much salt they have in them. So, they recommend use unsalted and u can always adjust the saltiness to ur liking! U two are too much cuteness! 💜🥰
@NikkiVegan
2 жыл бұрын
You're so right, chilling the butter is key with any cookie recipe but especially when comparing and contrasting them side by side like this! Good question about salted butter...since most vegan butters are salted (except for Miyoko's unsalted) I find that most vegan recipes are tested with vegan butter and the salt is taken into account during the testing process. That's the case with my recipes anyway! I always specify which butter and which salt I'm using when I can to make the recipe as accurate as possible. Unless the recipe says to omit salt or use salted butter, I recommend following vegan recipes as they're written (at least the first time around) for best results at home 😊😊 Thank you so much for this nice comment! Beautiful video Nikki, thankfully where I live there is only one brand of vegan butter,it is local and happens to work amazing so I don't have to worry too much about options. Hey I also just wanted to ask you something I've been meaning to ask for a while.. there is this guy on KZitem 'Goatis' and he has a video about you from 3 years ago, it is heartbreaking and I was wondering if you did anything to put it down? I also have never seen you address that so were you not aware of it ? Just thought I'd tell you because when you type nikkivegan on KZitem that's the first video that pops up. Such a shame that KZitem gives people a platform to bash one another but hey what can you do, the cost of having an online presence !

Hey Nea! I'm glad you have a greta local vegan butter option there that you love! That's all you need! 😊😊 And thanks for looking out for me, that's so nice. I don't really comment on stuff like that but I'm really grateful for your support and encouragement. Thank you ❤️ Hope you have a great Sunday!
