3 little suggestions: 1. Use a cupcake/muffin tin to experiment with different flavors you'd like to try. 2. Make the spicy jam into a 'fruit cheesecake'-like filling/swirl/frosting by mixing 1:1 tablespoon jam to cream cheese together before using as filling/swirling/frosting. 3. Sweet candy chips/nuts/fruit/spices/seasoning may be added to batter (max ½-1 cup to 2 cups batter) - sweetened (chocolate/peanut butter/any flavored candy chips) + nuts + dried/fresh diced fruit can be dusted in flour before folding into batter to prevent sinking to bottom, dry spices + seasonings are usually stronger flavorings than liquid essences if too much is used (ex: 3+ tbs to 2 cups batter) but experiment with different combos if you feel adventurous (ex: allspice/pumpkin spice + caramel chips or red velvet extract + white chocolate chips or chocolate batter + peanut butter chips) Happy experimentation & good luck (Happy 2024, i hope this helps)

Banana bread is best cooled completely, wrapped in plastic, then the next day slice and enjoy. I don't know why, but it tastes better, and the texture is better. My favorite is to toast the slice and smear with butter.

unfortunately from everything i've learned with baking yeah you arent supposed to cut into it right out of the oven. Even though that is my favorite time to eat a slice of bread with butter

True… but you can get the same effect from just Microwaving a slice & then putting butter on it.. Better to just do that so you can let it sit once it comes out the oven. Almost all types of bread ur not supposed to cut into fresh out the oven, so u were definitely right about that..

I heard the disappointment when I saw the video... also banana fritters with spicy sour sauce hits well, I just don't think banana bread has the right profile and chilli jam remains one of the worst things I've eaten. Call me team sriracha or pickled chillis...

My favorite is making french toast out of the banana bread with a little bit of cinnamon, vanilla extract, and a splash of milk in the eggs. That would’ve been really good with the spicy jam on top of the french toast after cooking it instead of baking it in.

The flavor of banana bread changes A LOT as it cools down. Even if you reheat it afterwards it’s a different taste from fresh out of the oven. Honestly I say give it another try after letting it cool, especially since you got such positive feedback after sharing it

You gotta let baked goods cool before you cur them. Especially a bread or cake. It affects the crumb of it. Also, it was probably better cool. Personally, I can't wait till it's totally cool with something like banana bread. I wait till it's still a little bit warm. Like luke warm, so to speak. So you can still enjoy that out of the oven warmth, but it's done cooking and should be fine. But yeah, so next time, wait to cut it.

Next time, roll the dollops of jam in some flour. It's more likely to stay where you want them. I learned it when making jam tartlets to stop the jam from baking out. Also, if you put dried fruit in a cake, dust it with flour before adding it to the batter. I stops it from ending at the bottom.

You could have just spread the jam on the first slice of bread you cooked once it was baked to see if you like the combination, then , if you didn’t like the taste combo, not applied the jam to your other slices, rather than chucking jam into the mix. It’s made the bread soggy texture wise you might have like it if it was just spread on ??❤

Baking recommendation (I’m not a professional but this is what I would have done): Wet ingredients with wet (but mix in the sugar), dry with dry and then combine into one bowl and mix until combined but do not over mix as per usual. The product will be consistent flavor-wise also. So when I’m making a loaf of bread or cake product like banana bread, when I am baking it you don’t overly want to put the jam or what ever into the center like that. It will sink to the bottom. Jam also adds extra moisture which needs to be accounted for and it sinking risks burning. It’s just a recipe for disaster 😆 My banana bread is naturally moist you don’t even need butter so recipes really vary. When baking with jam I would always use afterwards when it cools, like the dessert “Swiss Roll”. So if you insist, I’d almost put it on top like an icing if it’s not mixed in the batter or the person uses it after slicing their piece. When making cake, bread etc not letting the product cool does affect the outcome also. Waiting for things to cool down allows the steam to escape so the product will not be too damp and/or gummy. Sometimes in my banana bread after cooking I poke holes in the top with a tooth pick. Helps it cool faster etc. Your product looks damp, some people like that though 🤷🏻♀️

Next time, simply place the dollops on top. As it bakes, the jam will sink and the bread will rise around it. Then, it will be safely baked into the middle of the bread.

Sweet and spicy are absolutely the best combination! If you want less spicy, experiment. Perhaps put the spicy on top? Perhaps thin down your spicy? Or just leave it alone! The guys know where the heat bites are and where the reset bites are. Let them just eat what they like assuming they’re honest with you.

My mom says you need to let banana bread cool upside down then wrap it up overnight and don’t cut it until the next day. It’s always worked amazingly for me.

My grandma made banana bread with banana, would sub crushed pineapple for part of the banana, and would sometimes use almond or some other extract instead of vanilla. Adding in some coconut and chocolate chips made it really special. She served it with a mixture of cream cheese with a little frozen orange juice concentrate.

Maybe you should've tried partially baking the bread, first, before adding the spicy jam -- and using a kitchen syringe to squirt the jam into the unfinished bread. Then, put the bread back into the oven to finish its baking process

Probably try brushing some jam on while it’s still hot? That would give it a nice sticky glaze and you’re get that hit of flavour from it. Just my suggestion. I’m not a professional, just enjoy baking/cooking.

First, those aren't overly ripe. Second, the jelly/jam was too heavy, that's why it sunk. Third, those areas with the jelly would be hard to set due to the moisture/sugar in the jam. Fourth, DO NOT cut baked goods as soon as they leave the oven. Fifth, please don't bake again. 😂💀

It be like that sometimes. I'll bake something as an experiement to see how I like and be not impressed or happy with it. But then I'll let family and friends try and it and they love it. 🤷 I just tell myself that everyone has different taste buds. I know a lot of people that love some heat in their deserts (like the spice from peppers) and I have never liked a single spicy sweet treat that I've had. So maybe this is one of those times where your tastes just weren't lining up with the folks around you.

The best bet is not eating and baking with Roundup ready wheat...and sitting in air conditioning. Bob's Red Mill has a nice clean raisin bread mix that can be extended with flax, bananas, and some homegrown grape pulp and homegrown milled amaranth..It would save people on clean food doing sweats time, life, and energy 2015-2023.
