Guga, for rendering fat, I highly recommend chopping it up into bits or grinding it, submerging it in water and using the instant pot for 2 hours at high pressure. This breaks down the connective tissue and ruptures the maximum amount of fat cells, while impurities get captured in the water. Also, the heat is hotter than boiling but not as hot as an oven, so you don't get oxidation, but you get very thorough rendering.

The side dish that you made reminds me of Georgian dish called Khachapuri which is basically a bread with cheese inside it and it's one of the best things that we have. I Recommend making "Acharuli Khachapuri" which is the same with egg and butter and much more tasty.

One tip for your bread: pre-bake the bottom for like 10 minutes or so (might need a couple of tries to figure out the right time), then add the cheese and the top and bake again. Should result in a crispier bottom and over all better taste...

Adding fat is one of the top food hacks. About 1-2 teaspoons of bacon fat per serving in with your oil before frying up beef or chicken fried rice will make it fire. Gives it a glossy shine and makes it stickier.

For the cheese bread pie thing. I suggest using less cheese in the pie then adding more cheese on top for that crust. This should give you the same effect as small cheese buns instead of a cheese cake.

We sometimes put bacon fat (saved from cooking bacon for breakfast) in the bag when we sous vide cook ribeyes. It's amazingly awesome. Also we use the pelicos from dry aged steaks in with regular steaks (cooked sous vide) and it gives them a subtle dry-aged taste.

Did you know that what is called Hawaiian pizza was created in Canada? When I went to Hawaii, I have seen a place where they said that they had "The original Hawaiian pizza". It was with pulled pork instead of ham, BBQ sauce instead of tomatoes and the pieces of pineapple where very small and few of them, so it didn't overpower the mix of flavors but was just like a burst of freshness and sweetness when you bite into one.

To Rest, or Just Eat: Cheers Guga, here's an experiment I'd like you to try. In at least one of your SVE video, you mention that it's not necessary to rest sous vide cooked meat. Can you do a side-by-side experiment using a couple of roasts, one cut right after searing, and the other cut some time (30 mins?) later. Then, measure the amount of liquid released during carving each of them. I ask because I sous vided a tri tip this weekend and cut it immediately after searing. It came out great, but quite a bit of juice was lost. And I wonder if resting the meat would have made it even better. Thanks.

Hi Guga love your show. I was getting curious if it would be possible to use dry grass clippings to cook with in a grill instead of charcoal. I mow my lawn and was trying to find out different ways to use my grass clippings. Not sure if this even possible been trying to search on Google and nothing. Maybe you can try a small experiment .

For your cheesebread, add a layer of cheddar cheese to the bottom later (after oiling the pan). Add sliced dill pickles and bacon into the middle layer, then the dough on top. Perfected.

I learned the hard way about putting anything else in the bag. I left some olive oil and spices in with some center cut pork chops and they dried out really badly when I seared them. The ones before and after were perfect, same method except no other liquid in the bags. Interesting how that works.

Just thinking with the bread you could start cooking in the pan low heat to partially cook the base and give it some colour. Then put it in the oven, brush with butter and grill to get colour on the top

Grind the waygu fat with the same steak and make a combined grilled steak..the method is used for eggs (adding cold butter flakes to eggs, scramble then cook)

Guga, for the pao de queijo there is a airy-ness, to them, like holes in the middle. I think that creates its texture if you can get the dough to rise or have these air pockets I think you will nail it

I wonder if the Wagyu fat would add to the steak vs detracting if you sous vide normally, then brush some on after searing. Similar to resting it with a dollop of garlic butter.

You should Sous Vide the steak normal seasoned but instead of flame torching the steak to finish, you should heat up the Wagyu fat super hot then pour it on steak as a quick flash pour fry to crisp up the outer layer of steak.

Two ideas to maybe make the Wagyu part taste better: 1. instead of Thyme and Garlic, do a truffle infused fat. Really go ALL out expensive and rich with it 2. instead of confit style when cooking, either sous vide as normal and pan sear it at the end or reverse sear with the Wagyu fat and then grill. I think you're losing the flavor because of the heat and time in the sous vide bath and that's why the control ended up tasting better in the end.

Thought regarding the pie, you could always try and do an egg wash on top to give it more color, maybe for further presentation you could put some very thin tomato slices or something on there so it doesn’t look so barren. Shouldn’t change the taste much aside from maybe giving just a hint of that caramelized roasted tomato taste when you get a bit of it. A pie like that could probably use a little color. Also, a thought for a future video, why not just do a video where you use wagyu fat in place of butter or oil in a few different simple things. Fried eggs, stir fry, pie crust (for pot pie or something), use it to make a nice roux and do a beef gravy, use it in mashed Potatos, fried rice, etc. just line up a few different minor things that call for fats and see how Wagyu fat changes the flavor profile. I’m interested to see the impacts.
