Welcome back to my channel. Today, I’m really excited to share a new recipe with you: Competition-Style Iberico St. Louis Ribs cooked on my Kamado grill. Get ready for some seriously tasty ribs that’ll have you coming back for seconds!
In this video, I’ll walk you through step-by-step how to make these mouthwatering ribs.
Ingredients:
• 1 rack of Iberico St. Louis ribs
• Sweet BBQ rub
• Savory BBQ rub
• Fish oil (as a binder)
• Aluminum foil
• BBQ sauce (optional, for glazing)
• Wood chunks or chips for smoking (optional)
• Fresh rosemary sprigs
Instructions:
1. Preparation: Start by prepping the ribs and removing the membrane from the back. Trim any excess fat for a clean appearance. Score the meat lightly on the bone side for enhanced smoke penetration.
2. Seasoning: Brush both sides of the ribs with fish oil as a binder. Apply the sweet BBQ rub generously to the bottom side of the ribs, ensuring even coverage. Follow up with the savory BBQ rub on the top side of the ribs, pressing gently to adhere the rubs to the meat.
3. Smoking: Fire up the Kamado grill to 300°F (149°C) for indirect cooking. Place the seasoned ribs on the grill grate, bone side down, and let them smoke for 2-3 hours, maintaining a steady temperature throughout the cook.
4. Toasting Rosemary: While the ribs are smoking, toast up some fresh rosemary in a dry skillet over medium heat for 1-2 minutes until fragrant and slightly crispy. Chop finely and set aside.
5. Wrapping (optional): After the initial smoking period, wrap the ribs in aluminum foil and return them to the grill for another 1-2 hours of cooking.
6. Glazing (optional): During the last 30 minutes of cooking, unwrap the ribs and brush with BBQ sauce if desired, allowing it to caramelize slightly on the surface.
7. Final Presentation: Once the ribs are fully cooked and tender, sprinkle the chopped toasted rosemary over the ribs just before serving. Slice between the bones and dig in!
