You aren't kidding about the mushroom powder. I bought it when your "never buy fake meat again" video came out, and use it in SO many dishes for a more complex umami punch. Nachos? Mushroom powder. Chili? Mushroom powder. Burgers? Mushroom powder. Oil-based spaghetti? Mushroom powder.

@Eric Ryan If you have a Trader Joe's locally, they have a mushroom powder in their spice section. It's very good. If you don't have Trader Joe's, Amazon has a good one by Collected Goods. It's a shiitake mushroom powder.

I took notes on the recipe and thought I'd drop it here for others' reference: tvp broth: 1/2 cup water 1 tbsp white distilled vinegar 1 tbsp soy sauce 1 tbsp marmite 1 cup tvp .25 cups bacon bits let sit 30 minutes, stirring once in a large dutch oven, soften medium onion, red bell pepper, red jalapeño, and head of garlic in 5 tbsp olive oil on low heat add “meat” and brown in oil deglaze pan with 1 bottle beer add 3 tbsp cumin 2 tbsp chili powder 1.5 tbsp brown sugar 2 tsp dried basil 1 tsp smoked paprika 1 tsp salt .5 tsp dried oregano .5 tsp ground black pepper 2 tbsp mushroom seasoning 2 tsp liquid smoke 1 can chipotle peppers in adobo 2 28 oz cans tomatoes simmer, covered for 2-2.5 hours, adding 1 can drained, rinsed red kidney beans at least 1 hour in

I think that vegan chili would actually be one of the easiest things to make. After all, most canned chilis and the like are over 50% 'textured vegetable protein" Anyway. Nice choice. Also GOOD MORNING SAUCYMAN!!!

Just thanking you for introducing me to mushroom powder. I had other vegan "secret ingredients", like Marmite and smoked paprika, but the mushroom powder is quickly making faux-chicken bullion, pricey "better than bullion", and even homemade stock from the pressure cooker all fairly redundant. And unlike the other secret ingredients, in tastes good enough on its own that it helped me through some weight loss fasting... There were 4 different options on the shelves, so I picked the bag with fewest listed ingredients (Singapore brand). Next time I think I'll try the Taiwanese "original" (PoLoKo brand). I would be interested in which one has the least salt/sodium.

My wife is vegan, and I'm the cook who taught her how to cook a bit better, and now ends up eating more vegan meals than I ever thought I would. Chili is one of our favs, using beyond meat sausage in it for texture mostly. Just foraged a lion's mane mushroom cluster and can't wait to make some crab cakes similar to the ones you made (using just egg, and vegan worstershire sauce). Thanks for all the great ideas!

So, on your recommendation I picked up a big bag of mushroom seasoning. Definitely an interesting flavor. I would say it almost tastes like nutritional yeast with a lot of other flavor packed in. I don't think I'd use it as a soup base where it would be right up front, but I do add it to a lot of dishes as a flavor booster. 9 bucks for what seems like a lifetime supply from my local asian market. Thanks for the tip.

Recipe Ingredients Liquid Broth 1/2 cup water 1 tbsp white distilled vinegar 1 tbsp soy sauce 1 tbsp marmite Meat 1 cup Textured vegetable protein 1/4 cup Bac'n Bits Vegetables 5 tbsp olive oil 1 medium-large yellow onion, chopped 1 head of garlic, diced 1 red bell pepper, diced 1 red jalapeno pepper, diced 1 bottle beer Seasonings 3 tbsp cumin 2 tbsp chili powder 1.5 tbsp brown sugar 2 tsp dried basil 1 tsp smoked paprika 1 tsp salt 1/2 tsp dried oregano 1/2 tsp ground black pepper 2 tbsp mushroom seasoning 2 tsp liquid smoke 7 oz can chipotle peppers in adobe seasoning 28 oz can crushed tomatoes 28 oz can peeled tomatoes 1 can kidney beans, drained and rinsed Steps 1. Combine liquid broth ingredients, stirring until marmite is dissolved 2. Add textured vegetable protein and bac'n bits to a bowl, then pour broth in and mix. Let sit for 15 minutes, then stir and let sit for another 15 minutes. 3. Add olive oil to a dutch oven and heat over low. 4. Add onion to dutch oven. 5. Add garlic to dutch oven and stir to combine. 6. Add peppers to dutch oven and stir to combine. 7. Once peppers are slightly cooked, scoop over to side of the dutch oven. 8. Pour meat onto cleared part of dutch oven and cook until meat has browned. 9. Pour beer into dutch oven and use it to scrape the bottom of the dutch oven. 10. Add seasonings to dutch oven and stir to combine. 11. Add chipotle peppers and sauce to dutch oven. 12. Add canned tomatoes and liquids, then stir to combine. 13. Cover and cook for 1 - 1.5 hours. 14. Add kidney beans and gently stir in. 15. Cook for up to an additional 30 minutes, until beans are warmed up.

Chili is a good choice! Nourished Nutrition in Australia make an awesome TVP chilli mix that you literally just hydrate, warm up and add tomatoes beans and corn and you're done. So good.

Thank you, can't wait to try this! 😋 I'm pretty much pescatarian, cook mostly vegetarian and vegan. Husband is very happy with my cooking I love to cook for my friends of every diet. I've found that since I don't make a point of telling my carnivore friends that it's vegetarian, they don't even seem to notice the lack of meat--just comment that the food tastes good. (That's what counts, isn't it?) Was introduced to Marmite by my Brit friends, and agree with you, it's marvelous! One of my vegetarian friends told me he still missed gravy on his potatoes. I whipped up a gravy using sizzled mushrooms & onions, Marmite, & mushroom soy sauce (aka, "vegetarian oyster sauce"). Satisfied his craving, & he said it was the best gravy he'd ever tasted! 😊

wow thank you so much!!!! ♥️♥️♥️ So the mushroom powder I use you will most likely only find it at an asian market. Its a combination of dried mushrooms, mushroom extract and salt. Its like a MSG replacement with no MSG. There are loads of different brand names. If you search for Mushroom Seasoning you should find a bunch of asian brands... they will all be close to the same! Some do have MSG in them so just check for that if you dont want msg!

Happy 40th birthday! I love your recipe, my mouth watered 😛 lol The only thing I would do different is the amount of beans you add to your recipe. When I make chili (vegan of course) I use a different type of bean per can and I end up using between 4-6 cans.

Apparently jack fruit can be used to make a "pulled pork". Curtain mushrooms can be used to made to be taste like bacon or chicken.

Love this. I actually put mine together backwards, as I always make my chilli with my second day beans, so i get two entirely different bean suppers, both of which go great with my vegan buttermilk cornbread. I actually just made chilli yesterday morning, but it came out bad, because for only the third time in my life, I had slightly burnt my beans the day before (fell asleep with the crock pot on low). It's edible, but as one of my signature dishes (so very much like your recipe), I'm bummed. One thing I use that you didn't is diced carrots. They add sweetness, without needing to add sugar. Sometimes I do a mirepoix, but I didn't bother this time. I found it interesting you do like me, with the oregano and basil; I fall back on Italian seasoning. So not traditional! I sometimes add balsamic vinegar as well, just 2T. Cheers.

It’s funny you mention the comments about non vegans watching your videos, I feel like I’ve been pulled into a Trance man, and can’t stop watching. It’s intriguing to me to see what all you create, as you stated about non vegans, I’m not one but deff would try that Chili. Looks amazing. I made this tonight and loved it. In the past I’ve used ground up pecans for texture but the TVP and the bacon bits were awesome. I’d only suggest two tweaks: cut the brown sugar and up the chili powder another 1-2 tsp.

Wow! Except for the marmite and bacon bits, you just made my "Mom's Vegan Chili"!!! I've been making this for about 30 years and my boys (neither of whom is vegan, have requested it more than any other meal since they were in their teens (they're in their 40s now). Even my mega-carnivore father ate it without noticing that it had no meat in it. I do use more beans than you do (and often sub chili beans or pinto for kidney). This is great over tortilla chips or "Fritos" for a Frito pie and if you pour it over cornbread in a casserole topped with vegan cheddar it makes a fantastic Mexican casserole as well. You can use it on vegan hotdogs for chili dogs too. It is incredibly versatile as well as delicious! I hope more people try it and consider that being vegan doesn't mean you have to eat nothing but carrots and celery!

HAPPY BIRTHDAY GEEZER! Love your content, always impressed (even though I am one of those Vegans that just doesn’t get why we need food to imitate meat!). I use to make vegan chili for potlucks at work and did the Post Punk Kitchen recipe because it uses whole lentils as the meat. My crock pot was always scrapped clean. But I think I will try this recipe next.

We recently spent some time in American Airlines lounge and they served a vegan chili made with TVP. My wife, who won't touch tofu, fake meats, etc really liked it. She said it tasted like meat to her. When I was in my 20's, I made chili with TVP a lot for a vegetarian ex. I wish I could remember the recipe I used, but I'm going to try yours.

I recommend just a 1/2 - 1 tsp of cocoa powder. Bring a new depth of flavor.
